School buses have reinforced sides, flashing red lights, cross-view mirrors, a crossbar and stop-arms, all of which ensure that children are protected and secure on and off the bus. THE KITCHEN DIVA By Angela Shelf Medearis New Year, New You! Many people invest time and energy in losing weight after the holidays. If youre one of them, the most important thing to remember is to adopt healthy habits that last. Glenda Kinder, nutrition and health education specialist with University of Missouri Extension, suggests working on habits that result in both health benefits and weight loss. Weight-loss-only diets dont work because they focus on avoiding forbidden foods, not on enjoying delicious, nutritious foods. When making diet changes, keep it simple. Focus on making different choices and examine the types of food you typically eat. Instead of highly processed foods made from white flour, look for ways to eat more wholegrain foods. Its never been easier to find a tasty, whole-grain product in breads, cereals, crackers and other grain foods. One of the best ways to satisfy your appetite is to eat a lean, healthy protein at each meal. Healthy proteins like chicken or turkey breast, fish, lean red meat, whey protein and nonfat dairy can help you stay on your diet plan. For some meals, choose a vegetable protein like nuts, beans, tofu or edamame. In general, a protein serving should not be more than the size and thickness of the palm of your hand. Proteins take longer for your body to digest, so you feel full longer. A meal high in protein and plant foods can prevent cravings for up to four hours. Another practice for a healthy diet is to eat two colors at every meal. This means eating two or more servings of plants -- the fresher and more colorful the better -- morning, noon and night. Although juice is a healthy choice, its best to limit the amount consumed to no more than 3/4 cup a day. Youre better off eating the whole fruit -- its more satisfying and provides more fiber. Theres nothing like fresh produce for improving health and achieving weight loss. Vegetables are more important than fruits, so try to have at least one vegetable at each meal. If you follow these simple guidelines and incorporate great recipes like my Chicken and Apples with Lemon Balsamic Sauce, you can control hunger, and youll give your body the disease-fighting nutrients it needs. CHICKEN AND APPLES WITH LEMON BALSAMIC SAUCE Chicken breast meat is a healthy but rather bland source of protein. Pairing lean chicken with apples and spinach in this flavorful lemon balsamic sauce showcases each ingredient and provides you with a lean protein, fruit and a vegetable in one dish. 4 chicken breast halves with the skin but no bone (about 1 1/4 pounds) 1 1/2 tablespoons poultry seasoning 1/2 teaspoon salt 1 teaspoon freshly ground black pepper Cooking-oil spray 1/4 cup balsamic vinegar 2 tablespoons freshly squeezed lemon juice 1 teaspoon lemon zest 2 cloves garlic, minced 1 cup canned reduced-sodium chicken broth or chicken stock 1/2 teaspoon agave syrup 1 large Jonagold or Mutsu apple (8 ounces), cut in half, cored and sliced thinly 1 (16 ounce) bag triple-washed baby spinach 1 tablespoon whipped butter 1. Season chicken on both sides with 1 tablespoon poultry seasoning, salt and pepper. 2. Spray a large skillet with the cooking-oil spray and heat on high until hot; reduce heat to medium-high and add the chicken breasts, skin side down. Saute for 6 minutes or until the skin is nicely browned. Transfer with tongs or a slotted spoon to a plate and cover loosely with aluminum foil. 3. Turn the heat to high. Mix the remaining 1/2 tablespoon of poultry seasoning, vinegar, lemon juice and zest, garlic, broth and syrup in skillet until well-blended. Bring sauce to a boil. 4. Turn heat to low and add butter, stirring until it melts. Add apples and half the bag of spinach and stir. Simmer for 6 minutes and add remaining spinach. Simmer another 3 minutes, until the apples soften and the sauce reduces slightly. 5. Add chicken, skin side up, to the pan, along with any juices from the chicken plate. Cook 12 to 14 minutes over medium heat, or until chicken is just cooked through. Transfer chicken to each of 4 plates and top each serving with some of the sauce. Serve with whole-wheat pasta, couscous or brown rice. Serves 4. paranoia-inducing disaster flick follows a deadly plague and its effects on human life as we know it -- while ending a lot of it. Gweneth Paltrow picks up a new super-bug in Hong Kong, then spreads it all over the place on her way back home to her Matt Damon husband. A star-lined cast adds gravitas to the lives of the various folks feeling the impact of the epidemic, including Marion Cotillard, Laurence Fishburne, Kate Winslet and Jude Law. Directed by Steven Soderbergh, the story ably shifts focus from wide-angle to up close and intimate. The film really shines with its examinations of the many points of contact we have with each other in everyday life. When shaking the wrong hand or eating the wrong bar nut could end your life, people try to adapt to a new, sterile way of life. I Am -- Director Shadyac made his millions directing Jim Carey in movies like Ace Ventura and Bruce Almighty. After an accident left him with a long, painful recovery to think about life, he decided to put together a small crew and talk to experts about whats wrong with the world and how to fix it. Some segments are shallow and saccharine-sweet, but the majority are charmingly optimistic and at least a little thought-provoking. DOG OF THE WEEK I Dont Know How She Does It (PG-13) Sarah Jessica Parker reprises her favorite role as a grating, self-martyring career woman. Except in this movie, career women are borderline sociopaths, and stay-at-home moms are piranhas waiting to gnaw away at mothers who work uptown. Parker plays Kate, a working mom who has it all in her glittering upper-middle-class life, which is just so gosh-darn hard. Poking fun at the quirky challenges of everyday life is a valid premise for a story, but this movies world is charmless and polished clean. Parker is downright annoying as everyone else looks straight into the camera and heaps praise on her for working so hard to send emails and throw elaborate parties. The two proven actors handle the lowered-brow comedy like a brain surgeon handles a game of Operation. Gleesons quips and character-acting carry the comedy well and precipitate chemistry with Cheadles straight man. Now ABC is on the brink of cancelling PanAm. Karine Vanasse (Colette) recently tweeted, We received THE call ... PanAm is only coming back for one more episode, after Christmas. ABC quickly stated there are five more shows to air through February, and its still in contention for a second-season pickup. What theyre not saying: If ratings dont improve, the show is toast! So if you love PanAm, as I do, better get those cards, letters and e-mails to ABC, or PanAm wont be flying on the network anymore. *** In 1978, I met Judy Lewis, then Barbara Vining on General Hospital. We became good friends, and she trusted me with a big secret about her life. I already knew she was the daughter of The Farmers Daughter: Oscar-winning film and TV star Loretta Young. But what nobody knew was that she also was the daughter of film legend Clark Gable. Apparently, Young and Gable had a night of passion while filming The Call of the Wild in l935. Young hid Judy in a convent for 19 months while she arranged to adopt her. When Judy was 15, Gable unexpectedly turned up at her house. She was thrilled to meet him, but didnt know why he wanted to spend time with her. It wasnt until much later that she learned the truth. I kept her confidence until l994, when she revealed the truth in her book Uncommon Knowledge. She told me at that time, It feels so good to be able to openly be who I really am; you cant know how important that is! Loretta Young never acknowledged that Gable was the father until her autobiography was published after her death in 2000. Judy passed away Nov. 25 in Gladwyne, Pa., of cancer. Holiday Weight-Gain Myth Is Bunk, Scientists Say The common assumption that people put on 5 pounds over the holidays has been studied and actually found to be a myth, according to scientists at Vanderbilt University. In fact, weight gain from Thanksgiving through New Years is, on average, closer to threequarters of a pound to 1 pound. And while this doesnt sound as drastic, what typically happens with obesity is that people gain weight slowly and keep it on, said Vanderbilt obesity expert Roger Cone, Ph.D., professor and chairman of Molecular Physiology & Biophysics. Its not just overeating at holidays. We are chronically overeating and under-exercising in this country, Cone said. And what happens then is your weight gradually creeps up. If we do become obese, its because there is a minor difference between what we are consuming and what we are burning, he said. So the trick is to try to match your energy expenditure with your energy intake, to try to control your diet overall and keep it healthy, and to try to up your activity until the two are in balance. If your vision is not what it was, make an eye appointment. Look for those page-size magnifying glasses. Cant get to the library very often? Call to ask if it has a book van or will mail books. Or barter with a friend that drives, and include lunch out. Need to make home repairs or paint your living room but dont want to be up on a ladder anymore? Hire someone to help with the stipulation that youll do part of the work. Want to volunteer but dont know how to start? In addition to great taste, peanut oil is trans fat__-free and research shows that peanut oil can actually improve cholesterol levels. It also helps prevent chronic diseases such as diabetes and heart disease. In terms of fat and calorie content, deep-fried turkey is very similar to a roasted turkey. You may care to try this recipe during the holidays, at a tailgate party or any family gathering: Crispy and Juicy Deep-Fried Turkey 1 whole turkey 1 tablespoon of salt 1 teaspoon of black pepper 1 teaspoon of garlic powder 2 tablespoons of your favorite dry rub 3 to 5 gal. of 100 percent peanut oil (just enough to cover the turkey) Directions: Wash bird inside and out and allow to drain. Rub turkey with the salt, pepper, garlic and dry rub. Allow to sit at room temperature for 1 hour or until completely thawed and dry. Preheat peanut oil outdoors in a turkey fryer or a very large stockpot to 350 F. Make sure there is no moisture

on the skin and carefully lower turkey into hot oil either in the fryer basket or using a sturdy tool inserted into the chest cavity. Submerge the turkey completely. Fry turkey for 3 minutes per pound plus 5 minutes per bird. Internal temperature should reach 165 F. Remove turkey from the oil. Let sit 20 minutes before serving. Makes 4 servings Frying your turkey in peanut oil cuts cooking time in half, leaving you free for other things. After frying, you can reuse your 100 percent peanut fry oil to deep-fry the side dishes such as sweet potato fries, hush puppies or fried vegetables. Cream butter, almond extract and confectionary sugar until the mixture is light in color and smooth. Add melted chocolate to butter mixture until fully incorporated and then add egg yolks one at a time. Fold butter-chocolate mixture into the meringue. Once mixed, sift together dry ingredients and slowly add to wet ingredients until mixture is completely blended. Bake for 30 to 35 minutes at 350F in a 10-inch spring form pan that has been lightly coated with butter and dusted with almond flour. Ganache Frosting: Bring heavy cream to a boil on the stove, then pour over the chocolate and agave nectar in a large mixing bowl and mix with a whisk until smooth. NASCAR THIS WEEK By Monte Dutton Letting Fans Call The Shots Technically speaking, I'm really not a fan. It's impossible to write about something and be a fan. To be a fan, I'd have to have outrageous expectations and jaded analyses. I have often been advised to "think like a reader," which, given my small corner of the world, is similar to "think like a fan." I try to do so. I mingle. I return emails. More than ever before, this task is made easier by the social networking of Facebook and Twitter. I hear from a lot of fans. I feel their pain and, quite commonly, their anger. So here's my thinking ... about what fans are thinking. The racing of 2011 seems much better now than it actually was. The expectations for the next season are higher than they have any right to be. But it's good and easy to have positive thoughts when no racing is actually going on. Naturally, the fans miss it. There are so many references to how many days remain between now and the Daytona 500, you'd think they were shopping days until Christmas. This is the very best time of the year to be a fan of Dale Earnhardt Jr. Maybe things will be better. As long as things don't actually get appreciably better, this sentiment will be the same every winter. Come to think of it, it probably doesn't matter. If he wins the championship, they'll want him to win 10 races and the championship. Then every race and the championship.

Drawn to men who also were ambitious and hungry for love, the relationships they had with their husbands and lovers would, in the end, be sacrificed for the sake of their work. Cicely Fairfield was born in London in 1892. As a young woman, she took the nom de plume of Rebecca West, the iconoclastic feminist character in Ibsens play Romersholm. She fell in and out of bed with H.G. Wells and even gave birth to their illegitimate son, Anthony Panther West. During an era when speaking the truth could get a woman blacklisted or worse, she was outspoken and fiercely independent. For example, she once observed that there was no reason for the existence of the male sex except that one sometimes needs help moving a piano. She received acclaim as a book critic, author and correspondent. Her coverage of the Nuremburg Trials for The New Yorker following World War II received international acclaim. Dorothy Thompson was born in 1893 in Lancaster, N.Y., and she, too, was determined to be a journalist. After arriving in London in 1921, she met West and later married Sinclair Lewis after divorcing her first husband. Thompson was one of the first foreign journalists to interview Hitler, and her reporting of fascism so outraged him that in 1934 she was expelled from Germany by the Nazis. Susan Hertog, a New York-based freelance journalist and photographer, is the first author to link the two women and document the indelible impact that both had on our culture and the profession of journalism.
