Join the beet renaissance! Aside
from the health bene ts which
include signi cant amounts of ber,
potassium, folic acid and vitamin C,
beets come in a variety of colors,
shapes and textures. Varieties
include Detroit Dark Red with deep
red roots and delicious dark green
tops, Chioggia with interior rings
of bright pink and white, and
Golden with bright yellow esh.
This packet plants three 5 foot rows.
When to sow outside: RECOMMENDED.
2 to 4 weeks before average last frost, for
early summer crop, and late summer for
fall crop. Growing during hot temperature
periods should be avoided. Zones 10
and 11 can sow fall through winter.
When to start inside: Not recommended.
Special germination instructions: Soak
seeds for 8 to 24 hours before sowing.

Cover Crops

Cover crops are fast growing plants,
usually grains, legumes or grasses,
used by farmers and gardeners for
their benecial qualities and not
usually intended as food crops. The
use of cover crops has taken place
since ancient times. Cover crops work
in lots of ways and places.
ABOVE GROUND:
Weed Control
Because of their fast-growing
nature, cover crops are often able
to outcompete weeds for resources
like water, light, and nutrients. This
suppresses weeds to a manageable
level or stops weed growth altogether.
When used like this, they are referred
to as smother crops.
disease/Pest Control
When used as part of a healthy
rotation, cover crop plants displace
disease organisms by replacing their
preferred hosts. Weeds often harbor
insects that prey upon garden plants.
So, by suppressing weed growth,
cover crops can suppress pest insect
populations, too.
IN THE SOIL:
Soil Flora and Fauna
When cover crops decay and leave
behind organic matter, they act as
a food source for earthworms and
benecial soil microorganisms. Increased
diversity of soil life usually leads to
healthier soil and healthier plants.
Physical effects
Cover crops are often grown to improve
the physical characteristics of the soil.
Many cover crops, like buckwheat and
oats, have very ne roots that are able
to penetrate and loosen tough soils.
When the roots die they leave behind
looser soil and organic matter.
Many times, cover crops are planted in
fall and left for the winter. The mat of
plants that is left behind helps hold the
soil in place and protects it from the
potential ravages of winter and early
spring weather.
When cover crops are incorporated into
the soil, their decay provides organic
matter that lightens soil, improves
its texture and aeration, and can
equilibrate its water holding capacity.
Nutrient effects
Cover crops are often referred to as
green manures. This is because, like
manure, they add organic matter to
the soil. But, also like manure, they
can increase the fertility of soil. The
humus that they add to soil helps hold
nitrogen for plants to use and prevents
it from leaching away. Some cover
crops are legumes, like peas, and have
the ability to take nitrogen from the
air and turn it into plant food. Others,
like buckwheat, gather phosphorus
from the soil and make it available to
other plants upon their decomposition.
Therefore, cover crops may reduce or
eliminate the need to fertilize the soil
with nitrogen and phosphorus.
TIPS FOR USE
Preparation is usually
minimal for sowing cover
crops. Cultivate the soil
to a depth of about 1".
Sow the seeds at the rate
recommended on the
packet. Scatter evenly.
After sowing, tamp down
the soil lightly. If you live
in an area with seasonal
rains, try to time your
sowings to just precede
the rains. Otherwise, water
immediately after sowing,
and keep the area moist
until your plants emerge.
Once established, most
cover crops require minimal
additional water.
Its best to cut down or
incorporate cover crops
before they produce seed.
If you dont live in an area
where winter cold will kill
the plants, then cut or till
the plants just as they begin to ower
or before. If used in an area where frost
will kill a fall-sown crop, the plants
can be left all winter. Small plants can
be directly tilled into your soil. Larger
plants can be cut down with a weed
trimmer or mower and left on the soil
surface to dry before they are tilled in.
If you choose not to incorporate your
cover crops into the soil, they can be
composted or cut and laid on top of
the soil as a mulch to be removed later.
Wait 3-4 weeks after tilling or turning
in to begin sowing.
Cover crops are used after fall harvest
and clean up to benet the soil and
prevent erosion. But, they can be
used any time of year. In mild winter
climates, cover crops can be used
year-round but should be cut before
they set seed. They can also be sown in
spring to benet the soil and suppress
weeds. Then, spring-sown areas
can later be tilled and used for mid
summer and early fall sowing.

Stuffed Grilled Eggplant
with Heirloom Tomato
Coulis

serves 4
STUFFED EGGPLANT INGREDIENTS:
8 slices of eggplant, sliced lengthwise " thick
salt
fresh ground pepper
2 tablespoons olive oil
1 cup fresh ricotta
8 leaves of basil
1 mild pepper
DIRECTIONS:
Brush the eggplant with olive oil, season with salt and
pepper. grill or saut. make sure the eggplant slices
are cooked all the way through and slightly browned
Allow to cool. slice the pepper into " strips or rings.
season with salt and pepper. saute in olive oil or grill
until tender. in the center of each slice of eggplant put
a heaping tablespoon of ricotta,

/8 of the peppers,
1 basil leaf and roll the eggplant up.
HEIRLOOM TOMATO COULIS INGREDIENTS:
cup fresh onion sliced
2 tablespoons olive oil
2 cups heirloom tomatoes, skinned and seeded
salt
fresh ground black pepper
1 tablespoon fresh chopped basil
1 teaspoon fresh chopped chives
DIRECTIONS:
in a medium saut pan cook the onion over
medium heat in olive oil until tender. Add the fresh
tomato, season with salt and pepper, and cook for
approximately 20 minutes, until tomatoes break down.
lightly oil a 7"x 9" baking dish with olive oil. Place the
flled eggplant in a baking dish, add the fresh tomato
coulis over the top. Bake in a 350 f oven for
15 minutes or until heated through. Add the chopped
herbs over the top and serve.

TURNIPS, RUTABAGAS,
AND PARSNIPS
Dozens. Thats how many cookbooks I
have in my eclectic, carefully-chosen
collection, and sadly, not one contains
a single mention of two of the most
intriguing root vegetables on the
planetthe rutabaga (p. 14), and its
close cousin, the turnip (p. 16). Im not
sure why these earthly orbs arent
more popular in this country, but for
those of us who know them, we dont
need a famous cookbook author to
inform us of their savory, (and
sometimes sweet) delightfulness.
Rutabagas and turnips, along with the
slightly more popular parsnip (p. 10),
nd feature only in stew-type recipes, if
at all. Considering their heritage
however, stew is an appropriate choice
for root vegetable cookery. Cultivated
for centuries in the cooler climates of
Northern and Eastern Europe, root
vegetables have long been staple foods in
climates that value a reliable, late-season
harvest. Root vegetables are worth their
weight in gold for no other reason than
their long-storing characteristics
offering a bit of hearty nourishment
during dark winter months.
Parsnips, rutabagas, and turnips, each
a blank canvas (similar to potatoes,
only with more depth and dimension)
the backdrop for richly-avored meals
such as wild mushroom ragout, stir-fry
vegetables, oven-roasted chicken, or
even tofu smothered in garnet-colored
barbeque sauce. Then coming from
behind the scenesin dishes like
Scalloped Rutabaga and Turnip,
Parsnip Apple Soup, and Balsamic-
marinated Parsnipsthe complex,
delightful earthiness of these garden
gems easily becomes the main event.

BEETS
Distinctly crimson, with an
unforgettable avor, beets are the
Prima Donnas of the root vegetable
kingdom. While they dont always
play well with others, they can share
the stage for a delightful meal as long
as the beet ego is stroked accordingly.
Classic beet pairings include anything
that can stand up to this powerful
matriarch, like cheese, for instance
(pungent, stinky cheeses tend to top
the list), and fatty nuts such as walnuts
or pecans. Savored raw or cooked, and
highly nutritious, beets are incredibly
sweet. Cooking intensies the
sweetness, and draws out a distinct
earthiness that is unmistakable.
Borscht is probably one of the most
famous root vegetable dishes, and is
either adored or despised, depending
on ones disposition towards its
primary ingredientbeets. Nourishing
Russians through many cold winters
and a few cold wars, it deserves
accolades for its determined
perseverance.
Of course, there is nothing wrong with
a hearty root vegetable stew or classic
borscht, but to relegate these
wholesome vegetables to stew alone is
a culinary crime. I invite us all to step
outside our root vegetable comfort
zones and take a more adventurous
culinary approach when it comes to
cooking with root vegetables.
I invite you to explore some of these
lesser-known root vegetables. Fresh
from garden to plate, or stored for
weeks after fall harvest, root
vegetables nourish and ll us through
the winter months.

Recipe
roasted Beet Sandwich

INGREDIENTS:
2 to 4 fresh beets, roasted,
peeled and sliced
2 large handfuls of fresh arugula
4 slices (1/2-inch-thick) good quality,
multi-grain bread slices
4 tablespoons soft goat cheese
2 teaspoons balsamic vinegar
3 tablespoons olive oil
2 teaspoons balsamic vinegar
sea salt, to taste
DIRECTIONS:
remove stems and greens from beets, wash and pat
dry. Wrap in foil, drizzle with small amount of olive oil,
sprinkle with sea salt, and roast at 400 f until soft (30
to 50 minutes, depending on the size. A toothpick should
be easily inserted all the way to the center.) When cool
enough to handle, gently rub the skins off. Toast the
bread. spread half a thick layer of goat cheese on one
slice of toasted bread. layer sliced beets on top of goat
cheese. Pile arugula on top of beets. drizzle with a small
amount of olive oil, balsamic vinegar, and sprinkle with
salt. Top with other toasted slice of bread.

INGREDIENTS:
2 tablespoon canola oil
1 medium onion (small chopped)
1 garlic clove (small chopped)
1 tablespoon ginger (small chopped)
3 cups fresh spring peas
4 cups vegetable stock
small mint sprig
1/2 cup blanched spinach
1/2 cup greek yogurt
1 teaspoon grated lemon peel
salt and pepper as needed
DIRECTIONS:
Using a medium sauce pan saute the onions, garlic and ginger
in the oil, cook until soft and no color. Add the vegetable
stock and reduce to . Chill in ice bath. When cooled combine
with the rest of the ingredients and puree until smooth. Pass
through a fne sieve. Keep chilled until needed.

Oven-Baked Curry
rutabaga Fries

INGREDIENTS:
rutabagas
Olive or grape seed oil
Curry Powder
salt
DIRECTIONS:
Preheat oven to 400 f. Peel rutabagas with a vegetable
peeler. Cut rutabagas into fries (i like broad thin steak
fries, but traditional shape works well, too). Place fries
into a large bowl and toss with enough oil to evenly coat
the outside. Place the coated fries on a baking sheet in
a single layer. sprinkle with salt to taste. Bake at 400 f
for 12 to 15 minutes, turning once. fries are ready when
tender and golden. When tender, remove fries from oven
and sprinkle generously with your favorite curry powder.
Turn once and coat the other side. (i like garam masala or
maharaja style for this recipe). Place fries back in the oven
for 2-3 minutes; this will awaken the avors of the curry
powder. serve hot. Try adding other avors at the end of
baking. This recipe works great with shallot powder, garlic,
hot pepper, and adobo seasoning.

Many people I meet wax
nostalgic about the idea of
having a vegetable garden, but
often say things like, I wish I
had time to garden, or, I wish I had space for a
garden. Those statements come from an old-
fashioned notion of what a garden actually is.
A garden is about growing food. It is as simple
as that.
You don't need a large plot of land to grow food. If
you do it on a scale that ts your living space and
lifestyle, it doesnt require a lot of space or a big
time investment. In fact, if you have a kitchen, you
can have a garden by growing micro greens in a
windowsill container or sprouts in a jar.
Gardening indoors is so easyanyone can do it!
MICRO GREENS
Growing micro greens is one of my favorite ways
to garden indoors. It adds extra value to my seed
packets, because I always know that I can use some
of my extra vegetable or herb seeds in the kitchen
that I dont have room to sow outside. Micro greens
are the seedlings of vegetables or herbs, grown to
a height of 1"- 3". I grow them in recycled plastic
clamshells (like you get strawberries or berries in
at the store) with about an inch of potting soil. I
sow the seeds more densely than I would outside.
Since micro greens are harvested at such a young
age they don't require much light or space to grow,
so any window will do. In just a few days after
sowing, harvesting is as easy as a little snip snip
with scissors. Then, I have beautiful and nutritious
additions to my salads and sandwiches. The
Botanical Interests Micro Greens mixes (p. 8) are
fun, and I also like to grow individual vegetables
varieties like amaranth, arugula, beets, bok choy,
broccoli, cauliower, kale, leeks, lettuce, mustard,
onions, and peas. Herbs like basil and cilantro
work great too. Sunower shoots even make
succulent micro greens that add a touch of spring
to any meal. (If you havent tried them, you are in
for a treat!)
SPROUTS
Sprouting is the easiest form of indoor gardening,
because theres no soil or sunlight required. If you
have a Mason jar, you can grow sprouts! Simply
soak the seeds in water overnight then rinse for
a few days and voil! You have
homegrown food ready to eat.
Specic growing instructions are
inside each packet, so you can
be sure to grow a successful crop
every time. My favorite sprout
variety is mung beans. They are
high in protein, and I like to eat
them young with a little rice,
sprinkled with soy sauce and
sesame oil for a lling meal. It's
fun to experiment with different
varieties to nd your favorites. If
you like mild avor, alfalfa sprouts
are perfect. But, if you like a little
zing, try the Sandwich Mix or
China Rose Radish sprouts. I like
to eat them in wraps with avocado.
Broccoli sprouts are also mildly
spicy. They have the added benet
of phytochemicals that keep us
healthy, and they make a great
topper for omelets.
Isnt it nice to know that you can
garden indoors at any time of year?
Its a great way to get your green
x, no matter where you live or
how busy your schedule is. The
magic of seeds never stops amazing
me. I hope they add joy to your

Container Gardens

1. An easy way to make sure your container composition
looks balanced and pleasing to the eye is to include three
different types of plants: spillers, fllers, and thrillers.
spillers are plants that soften the edge of the pot, like
trailing nasturtiums. fillers are plants that make a pot feel
lush and well-rounded. And every pot needs a few eye-
catching thrillers, such as deep purple ornamental peppers.
2. Combine edible and purely ornamental plants for a
whimsical yet useful potted display. Herbs are especially
good for these sorts of containers. Keep an eye out for
the ashier varieties, such as Purple Petra basil or Zeolights
calendula. lettuces and leafy greens can also be showy.
3. strawberry pots can be used for more than just
strawberries! many trailing herbs and typical rock-garden
plants such as portulaca and sweet alyssum work really
well in the pockets of a strawberry pot. To transplant your
seedlings from their starter pot to the strawberry pot, feed
the leafy end through the openings from the inside of the
pot, as opposed to backing the root ball in to the opening
from the outside.

1. Your container soil is really important. if youre
having a hard time choosing, pick one that is labeled
for containers. it will hold the right amount of water,
nutrients, and air to ensure the best possible plants.
2. Want to use a really big container but dont want to
use tons of soil? Turn over a plastic or clay pot in the
bottom to displace some of the soil. Youll save on
soil, water, and your container will weigh less, too.
3. Plan your container according to the size of plants
you want to put in it. even plants in containers need
room to grow. Plants that dont have to fght with
each other for their necessities tend to perform
better in the long run.
4. Containers that are really full, very small, or in sunny
and windy places will need water more often. Time
your watering so that your plants are fully hydrated
before the sun hits them. These plants will be better
able to withstand the rigors of life in a pot.
5. Container plants need
regular feeding. You can add
a sustained-release fertilizer
that may feed for much of
the season or add soluble
fertilizer to your water.

INGREDIENTS:
4 T butter, diced
cup our
Pinch salt
1 lb shallots, thinly sliced
2 T oil for cooking
2 T fresh sage, chopped
1 whole egg
DIRECTIONS:
Preheat oven to 350 f. in a medium bowl, work butter, our
and salt together until butter is pea sized. Add 1 T water and
form dough into a ball. roll dough out into an 8 inch circle or
rectangle. refrigerate until frm. in a saut pan cook shallots
in oil until onions are well browned, stirring often to prevent
them from burning. remove shallots from heat and allow
to cool. Add sage, egg and half and half, stirring well to
combine.remove dough from refrigerator to a baking sheet.
Top with shallot mixture and bake until set and golden, about
15 minutes. Cut into slices.
for the Tyee spinach: in a large saut pan over high heat, cook
garlic in butter until it just begins to color. Add spinach and
salt. Allow leaves to just wilt then remove from heat.
To serve, divide tart, warm spinach and goat cheese among
4 plates. serve immediately.

Top 10 Seed Starting Tips
Simple Steps to Getting a Good Start
You can always be sure that you are
getting the highest quality when you
choose Botanical Interests seeds. All
seed lots are tested at an independent
laboratory for viability before we
accept them for packing, and we only
accept the best! Here are some tips for
giving your seeds a successful start:
INDOORS:
1. Use clean containers.
If you are re-using containers, sterilize
rst by soaking them in a 1:9 bleach/
water solution.
2. Use a high quality seed starting mix.
A good mix will be nely milled. It will
provide good drainage, but also retain
moisture well. Do not use potting soils
for starting seeds. They are excellent
for transplanting, but are often too
chunky and contain added fertilizers
that are too rich for seed germination.
Mixes that contain perlite (a white
rock-like volcanic glass product) should
also be avoided. Its too sharp and fast
draining, and can make it harder to
pull roots apart when transplanting.
Thoroughly moisten your seed starting
mix before sowing.
3. Sow at the recommended
depth on back of packet.
Some seeds require light to germinate,
and some seeds require darkness.
Sowing at the recommended depth
will increase chances
of germination.
4. Maintain adequate moisture.
Seedlings must be kept moist but not
soggy. Check daily to see if they need
water. A clear plastic cover or a plastic
bag can help hold in moisture. Remove
the cover as soon as seedlings emerge.
5. Use uorescent lights.
Place lights 1"-2" above seedlings and
leave them on for 16 plus hours per
day. (Your local hardware store will
have an inexpensive timer you can use
to turn lights on/off automatically.)
The ideal lights have both a cool and
warm bulb for a full spectrum of light,
but any bright uorescent will do for
seed starting. Avoid starting seeds on
windowsills. Your brightest window
has only a fraction of the light needed
for seedlings to thrive. Insufcient light
results in spindly, weak plants.
6. Harden off.
After the plants have their rst true
leaves, and all danger of frost has
passed, you can move them outside.
Plants started indoors are soft,
meaning they are fragile and not used
to the intensity of outdoor sunlight and
wind. They will need to be hardened
off (transitioned slowly). Place them
in a sheltered area with shade, then
over the course of a week, gradually
increase their exposure to direct
sunlight. Check daily to see if they
need water. After a week, check your
weather forecast. If an unexpected
freeze is predicted, they may need
to be protected with a row cover or
temporarily brought back inside. If the
temperature is going to remain above
freezing, they can be transplanted into
the ground or a larger container.
OUTDOORS:
7. Sow at the recommended time
on the back of the packet.
Know your average last frost date. In
spring, sowing outdoors at the correct
time is important to prevent frost
damage and to take advantage of an
early start with cool season varieties
that can handle
the last few frosts
(like broccoli,
carrots, lettuce,
peas, etc.).
8. Sow in average garden soil
or soil that has been amended with
only well-aged compost.
Never sow seed directly in beds that
have added articial fertilizer or fresh
manure that hasn't been aged at least
six months, because high nitrogen
content can inhibit germination and
burn young seedlings.
9. Follow spacing and thinning
recommendations on the back
of the packet.
Seedlings that are too close together
will compete for nutrients and water,
resulting in weak growth. (There are
some exceptions. Lettuce or mesclun
can be sown thickly
for baby greens.)
10. Keep it moist.
Never let the soil dry out! Young
seedlings occupy just the top " to
" of soil. If this thin layer gets dry,
they can die. A newly sown area may
require water once or twice a day to
keep the soil moist.
Most kale gets sweeter as the rst
frost hits. Red Winter is sweet all the
time making it excellent for mesclun
mixes, garnishes and sauteing.
The red veins, wavy margins, and

Building a Teepee Trellis

In the garden continuum, structure can
be a constant with form, beauty and
function. It weathers all four seasons;
training, supporting and providing
ample space for fruits and blooms to
grow at their best. The traditional teepee
trellis is the epitome of this versatile
design. These charming structures
provide an effective change in texture
and height amongst colorful ower
beds and climbing vegetables.
Bringing this structural effect to your
own home garden is simple. Here is an
affordable teepee trellis for the garden
made from a handful of materials
gathered at the hardware store. With a
helper, you can nish this project in one
afternoon. The teepee trellis will support
your beans, peas, vines or tomatoes.
Plus, should your gardens winter season
be barren, this teepee trellis will help to
maintain timeless character and charm
until your blooms return.
SUPPLIeS:
one 2"x 2" x 8' of post (have the hardware store
cut this into four 1"x 1"x 6' posts and keep the
residual four 1"x 1"x 2' pieces)
wood stain
paint brush
pencil
four 1" fnished nails
hammer
staple gun and staples
100' sisal rope or sturdy equivalent
sturdy scissors
small construction level
measuring tape
INSTrUCTIONS:
To Begin:
1. Stain all wood pieces.
2. With your hands, gather the 6' posts
at the top and spread apart at the
bottom. With the design looking like a
teepee, mark with your pencil where
all of the sides connect at the top for a
general reference. Tie together loosely
to hold.
The Cross Braces:
1. The next part of the project is creating
the cross braces made with two
of the residual 2' sections. This cross
support in the middle will add much
needed stability to the teepee. While
you hold the teepee at the top, your
helper will hold one 2' section at the
mid point of two opposite posts to
form the rst cross brace. Make sure
your cross brace is level and mark it
with a pencil on both sides.
2. Placing the two 6' posts on the
ground with the 2' section lined up to
the pencil marks on top, hammer in a
nished nail on both sides.
3. Assemble teepee design upright again
but this time place a second cross
brace on top of the rst to form an X
in the middle of the teepee. Level the
new cross brace and mark it on the
remaining two 6' posts.
4. Although tricky, while the teepee is
standing, hammer in a nished nail
on both sides of this cross brace. If
you need a piece of scrap wood to
hammer against for support, use it.
The Teepee Top, Middle and Sides:
1. With the mid-section assembled,
repeatedly bind the four 6' posts with
rope close to the top. Once secure and
taught, cut the rope and staple to the
wood in several locations.
2. To secure the cross brace, again
repeatedly wrap the rope around
their intersection. Once secure and
taught, cut the rope and staple to the
wood in several locations.
3. Lastly for the rope side supports,
measure and mark with your pencil 1'
increments along the 6' sections.
4. Stapling the rope to
start at a marked
location, begin to
wrap around each
post once. Staple
the rope as the post
is wrapped and
pull to next post
until nished
with that level.
5. Continue with each level until
complete!
