1. What do the terms saturated, monounsaturated, and polyunsaturated mean with regard to fatty acids?

Saturated fatty acid is a fatty acid whose carbon chain cannot absorb any more hydrogen atoms; found chiefly in animal fats

Unsaturated fats (monounsaturated and polyunsaturated) do not contain as many hydrogen atoms as they could

Monounsaturated fats could contain one more hydrogen atom. Polyunsaturated fats could contain more than one additional hydrogen atom.

2. List five (5) functions of fats in foods and the body and a specific illustration/example of each tends to increase blood cholesterol levels. a source of energy in foods. supply calories to the body essential for the proper functioning of the body. important for controlling inflammation, blood clotting, and brain development. serves as the storage substance for the body's extra calories. Healthy skin and hair are maintained by fat. helps the body absorb and move the vitamins A, D, E, and K through the bloodstream.

3. Is it desirable to have a cholesterol level of 110 mg/dl? Why? -Yes it is desirable because 110mg/dl is less than 200mg/dl which at the borderline.. Total cholesterol number (level) < 200 mg/dL = desirable (good) HDL cholesterol number (level) < 40 mg/dL = Bad HDL cholesterol number (level) > 60 mg/dL = Good LDL cholesterol number (level) < 100 = optimal (Good)

LDL cholesterol number (level) range 100-129 mg/dL = near optimal (ok) LDL cholesterol number (level) range 130-159 mg/dL = borderline high (not good) LDL cholesterol number (level) range 160-190 mg/dL = high (bad) LDL cholesterol number (level) > 191 mg/dl = very high (very bad)

4. Fat hydrogenation results in changing poly- and monounsaturated fatty acids into trans-fatty acids. Briefly describe some negative consequences of trans-fats intake on health. Trans fats increases the risk of coronary heart disease[1][2] by raising levels of LDL cholesterol and lowering levels of "good" HDL cholesterol. more harmful than naturally occurring oils. trans fat is naturally present in many animal foods in trace quantities, and therefore its removal from ordinary diets might introduce undesirable side effects and nutritional imbalances if proper nutritional planning is not undertaken. lipase is a water-soluble enzyme that helps digest, transport, and process dietary lipids such as triglycerides, fats, and oils in most if not all living organisms. While the mechanisms through which trans fats contribute to coronary heart disease are fairly well understood, the mechanism for trans fat's effect on diabetes is still under investigation.

5. Eating disorders occur due to a number of psychological and sociological reasons. But what constitutes healthy eating? Why is a good diet important? - A balanced diet is important to maintain health and a sensible body weight. No single food will provide all the essential nutrients that the body needs to be healthy and function efficiently. A balanced diet should contain protein, fats, carbohydrates and fiber

in the form of fresh vegetables and fresh fruit, all in the right amounts, providing you with a good supply of essential amino acids, essential fatty acids, vitamins, minerals, and of course fresh drinking water. In addition, the nutritional value of a person's diet depends on the overall mixture, or balance, of food that is eaten over a period of time, as well as on the needs of the individual. A diet that includes a variety of different foods is most likely to provide all the essential nutrients.
