Compared to Barcelona and San Sebastin, Madrid is stately, the modern embodiment of regal old Castile. This morning, fly from Barcelona to Bilbao. Continue to San Sebastin. Excursion: A Walk Through San Sebastin. Stroll through San Sebastin Donostia in the Basque language to see the highlights of this popular resort along the Bay of Biscay. Local Flavor: Discover why San Sebastin is a mecca for foodies during a typical lunch of pintxos, the Basque version of tapas. After lunch, check in to the Hotel Londres y de la Inglaterra.
Educational Focus: A History of Northern Spain. San Sebastin is in Pas Vasco, Basque Country Euskadi in the Basque language. There is a mystique about the Basque region and its people, who are most commonly believed to be descendents of the Vascones, a tribe that lived in this region long before the Romans invaded the peninsula.

Excursion: Pamplona. Wander along the 16th-century streets of Hemingways beloved Pamplona. Visit one of the largest bullrings in Spain, the chapel where matadors pray and the splendid Gothic cathedral. Local Flavor: Enjoy the local fare of the Navarra region at lunch. Depart for Madrid via Burgos. Excursion: Castilian Capital. En route, linger in delightful Burgos, the old capital of Castile; visit its Old Town and its famous Gothic cathedral. Completed in the 15th century, it took more than 300 years to build. Local Flavor: Dine on classic regional dishes during lunch in Burgos. Continue to Madrid, where you will check in to the Wellington Hotel.
Educational Focus: Contemporary Spain. Explore recent Spanish history and discover Spains role in the world today. Excursion: The Spanish Capital. Witness the grandeur of Madrid. See the Royal Palace; lively Plaza Mayor; beautiful buildings that line the Gran Va; and many other landmarks. Local Flavor: Break for lunch at one of Madrids classic restaurants. Excursion: Museo del Prado. Explore this world-class museum on a guided tour. Founded by Fernando VII, this royal collection includes masterpieces by Velzquez, Goya and other Spanish and international artists.

Spains diversity of landscapes and culture is reflected in its cuisine, but most people agree that Basque Country San Sebastin, in particular is the countrys culinary capital. Here, the freshest of seafood is the star on the traditional table as well as in restaurants serving progressive haute cuisine and all ingredients, from the land or sea, are treated with painstaking care and respect. It is said that the best tapas are found in Basque Country, where they are called pintxos. No one will argue that Barcelona is another gastronomes delight. Like San Sebastin, it is on the sea, so fresh fish and seafood are excellent. For a special, authentic treat in Barcelona, head to a llesqueria, where pa amb tomquet, bread and tomato, is a fine accompaniment to cured ham, sausage and cheeses. Though it sounds simple, this snack grilled bread rubbed with garlic and a ripe, juicy tomato before being topped off with a drizzle of Spanish olive oil is a local favorite. Pour a glass of cava, the sparkling wine produced in the Peneds region of Catalua, to accompany these tasty morsels. Of course, tapas can be found in Madrid, but you may wish to try traditional, hearty Castilian fare, such as roasts and stews.
