Heart Surgeon with His Heart in Farming

H
arvest is an exciting time at any
winery, but there’s been a special buzz
this autumn at Jada Vineyard &
Winery. Jada’s 2008 vintage is its first being
produced exclusively on site, thanks to the
completion this year of a handsome, state-of-
the-art winery and tasting room that over-
looks the vineyards in the serene rolling hills
west of Paso Robles.
“We’re very excited about it,” said Susan
West, Jada’s operations manager. “It’s a totally
different vibe. It’s so alive.”
Jada’s roots can be traced back a little more
than 10 years ago, when Jack Messina came
west from Florida looking for property in
Wine Country to grow olives. Those plans
soon changed when a friend said Paso Robles
was emerging as a world-class wine region.
Messina fell in love with the area and
purchased the 90-acre property in 1999.
Olive trees still line the winding dirt road
leading up to the winery, and Jada bottles and
sells gourmet estate-grown olive oil.

heart surgeon in Florida – where his wife
works as a nurse – now splits his time

between the winery and the East Coast.
There’s no doubt, though, that Messina is very
much a hands-on winery owner.
“He’s a farmer at heart,” said consulting
winemaker Scott Hawley. “You come across a
lot of personalities in the wine industry. It’s
great to come across someone who’s in it for
the love of it.”
It was a passion stoked during trips to
Europe, including Burgundy and Tuscany.
Hawley, who also consults for other wineries
and has his own label, said Messina is part of
the winemaking process from the vineyards
to the punch downs and bottling. Sixty
acres of the 90-acre property are currently
planted to mostly Rhone and Bordeaux vari-
etals, with some vines planted more than 30
years ago.
But they are also in the second year of a
program to replant about 15 acres, changing
the clones and increasing density. Hawley said
that will result in lowering the yield per vine
– intensifying the flavors of the grapes.
Asked what convinced him to sign on as
Jada’s winemaker, Hawley didn’t hesitate with
his answer.
“The vineyard and Jack Messina’s passion
for winemaking.”
Pointing to a row of boulders stacked in a
makeshift wall, Hawley noted they all came
from Jada’s hillside vineyards. The rocky,
calcareous soils, combined with its location in
the heart of a notch in the westside hills
known as the Templeton Gap, create unique
growing conditions, said Hawley.
“All the elements are here,” he said.
“There’s nothing but potential.”
That potential has been realized in the

wines – primarily blends, although Jada produces a 100 percent

Syrah under the name Jersey Girl. The name is a nod to Robyn
Messina’s native New Jersey. In fact, Jack Messina gives all his wines
names that have some personal connection, including Jack of
Hearts, a Cabernet Sauvignon, Merlot and Petit Verdot blend and
Hell’s Kitchen, a reference to the famed New York neighborhood
where his parents first lived after immigrating to the U.S.
The heart surgeon also named a Cabernet-Merlot blend Passing
By, a tongue-in-cheek play on words that suggests the health bene-
fits of red wine will help drinkers avoid bypass surgery.
The name of the winery itself honors Messina’s father, who
owned a fishing boat named Jada in the small fishing village in Italy
where he lived.
Hawley said in crafting wines for Jada, he resists trying to tailor
his style to what is currently popular.
“You make the best wine from the grapes to reflect the vineyard
and the consumers are going to follow.”
The winery’s first three vintages, beginning in 2005, were made
using facilities at nearby Calcareous and Denner vineyards. Now
Hawley, who on a recent weekday morning was assisting workers
de-stemming a batch of Merlot grapes, is eagerly anticipating the
chance to create wine on site.
Up to now, Jada’s production has been less than 2,000 cases
annually, but Hawley said he expects that to increase to about 2,500
for the 2008 vintage. But don’t look for Jada to ramp up its produc-
tion too much.
“Jack wants to stay true to the vineyard and not go high-volume,”
said Hawley.
An old, red barn on the property now contains the winery and
tasting room. The two-story structure included horse stables that
now house separate barrel rooms, while upstairs the former living
quarters is now a warmly decorated tasting room, accented with
maple cabinetry and specialty lighting, with plenty of outside
decking with sunset views.
A climate-controlled room surrounded by glass walls is one of the
tasting room’s most interesting features, with bottles stored there
until they are opened for visitors.
“Jack likes to do things well and he has to know all the details,”
said West, the operations manager.
Guests can sample the wines from the tasting menu for $5 per
person, and that includes artisan cheese pairings with cheeses
provided by local gourmet cheese shop Vivant.
Jada Vineyard & Winery is located at 5620 Vineyard Drive, off
Highway 46 West. The tasting room is open Thursdays from noon
to 5 p.m. and Friday through Sunday, from 10 a.m. to 5 p.m. and

When the Santa Ynez Inn opened its doors
in October of 2001, it was with the purpose

PER BACCO CELLARS

ongtime friends Craig Shannon and
Marco Rizzo shared many meals filled
with conversations of one day making
wine together. Craig, a third-generation vine-
yard manager had mastered the art of
growing grapes and knew it would translate
into crafting a superior product. Marco,
owner of Café Roma, knew it would be a
successful partnership and a perfect fit for
the restaurant. They both agreed on the
fundamental idea of pairing the best possible
fruit with solid winemaking in order to
produce wines of distinction. Marco’s child-
hood of reading comic books in Italy gave
him an idea for the label. Perbacco is a
northern Italian phrase used to describe an
unexpected surprise but it literally means
“for Bacchus,” god of the vine.
Craig was fishing in Mexico when Marco
called with surprising news. Opportunity
had struck when an older Chardonnay vine-
yard in Edna Valley came up for lease. They
jumped at the chance to farm it and before
they knew it their Chardonnay received 90
points. They specialized in Chardonnay and

Sangiovese but they soon looked for another
red varietal. In 2002, they decided to try a
relatively unpopular red grape to fit their
growing line of wines. At the time, Pinot Noir
was something that not a lot of people
wanted to touch. However, with their first
vintage Per Bacco beat out 350 other wineries
San Francisco’s Pinot Noir Shootout and
scored 91 points from Wine Enthusiast. Two
years later the “Sideways” phenomenon
occurred and the rest is history.

Vintner’s Grill in Santa Maria: The Central Focus
Santa Maria was once known as Central City, California. The agricultural
giant of the Central Coast was indeed the middle spot, a kind of halfway stop
between Los Angeles and San Francisco. But it wasn’t just broccoli and orange
trees that grew here. The Santa Maria bench is home to some of the great vine-
yards of California and renowned winemakers from all over the state buy fruit
from this region.
It’s no wonder then that one of the best eating spots in town is located out
near the Santa Maria Airport at the Radisson Hotel. The Vintner’s Grill is the
local hot spot for great wine and food as well as the restaurant to experience
true Central Coast hospitality.
“We’ve made a lot of changes to the menu and kept it alive,” says Manager
Jesse Jaime. “We still feature the great Santa Maria meat and potatoes like
braised shortribs and herb crusted prime rib, but we’ve also got an extensive

fresh seafood list as well.” With fresh tilapia, salmon, shrimp, scallops and a
side of the Chef Jorge Santizio’s cheddar grits, the menu is anything but the
same old.
Jaime has also added to the wine list with wines from around California as
well as an extensive local selection. “I wanted to be sure that we had wines on
the menu that expanded our tastes, not limit them,” he says. “So, I was able
to get some Napa and Sonoma selections on there as well as a few others.”
Jaime says that the Vintner’s Grill gets a lot of business travelers from both
L.A. and San Francisco. “They come here and meet, it’s kind of like the
common halfway point for them and we’re proud to be at the center of that.”
The Vintner’s grill keeps an eye toward the California casual style. “We’ve got
folks in here in ties and jackets and we’ve got people with shorts and flip-
flops,” says Jaime. Vintner’s Grill is a true California eatery.

The ‘Alumni’ of ‘Claiborne & Churchill U’

“That’s always the first question I get asked.”
We were talking with Claiborne (Clay) Thompson, who with his
wife Fredericka Churchill owns Claiborne & Churchill, a small ultra-
premium winery in the Edna Valley, just outside San Luis Obispo.
Twenty-seven years ago the Thompsons left their former careers in
college teaching behind in Michigan when they moved to California
to chase their dream in the wine business.
“Whenever people hear my story,” said Clay, “they always ask
me: ‘Don’t you miss teaching?’ At first I tried explaining what I
didn’t miss about academics (teacher burn-out, politics, bureau-
cracy, etc.), but as time went on I realized that I had actually
never given up teaching.”
Clay went on to explain that mentoring young people is
common practice among California wineries, and over the last
quarter-century a lot of “students” have passed through the

Clay. Other part-timers Clay remembers include Chris Weir, who

with his wife Malei now owns his own PR and marketing firm
(“Mooncatcher”), Erina Marchini, now a marketing analyst for
Nielsen Co., Derinda Gates, at present the financial accountant at
Vina Robles winery, and Chris Eberle, now winemaker at Eberle
Winery (no relation!).
We asked Clay about his present staff, which includes three full-
timers and nine part-timers ranging in age from the early 20s to the
mid-seventies. His winemaker is Coby Parker-Garcia, who began as a
student intern in 2002, came on board full time in 2004, and was
promoted to winemaker in 2007. Sales, marketing and hospitality is
the province of Angela Gloeckler, who started as Claiborne &
Churchill’s Tasting Room Manager in 2005. Most recently, new Cal
Poly grad Brook Thompson was hired as Wine Club Manager.
Indeed, there seems to be an unusual “esprit du corps” and
camaraderie at Claiborne & Churchill, with frequent staff
potlucks, wine outings and other get-togethers. In 2005, the
Thompsons took their whole staff to Hawaii for a week, to cele-
brate signing up the 1000th member of their wine club. “They are
the world’s greatest employees, without a doubt,” says Clay, “and
they make it fun to come to work every day. I’m hoping they all
stay here forever, but just to be sure I intend to outfit each of
them with a ball-and-chain, and throw away the key.”

Winemaker Profile: Cayucos Cellars

C
uriosity launched Stuart Selkirk’s wine-
making career. That, and an instinctive
appreciation for hard work and pursuing a
craft with centuries of tradition.
Selkirk is the winemaker for Cayucos Cellars, a
quintessential family-run winery that produces
about 800 cases each year.
Its roots can be traced to a day in the early
1980s, when Selkirk decided to find out what one
of his neighbors was doing with a truck-load of
grapes. It wasn’t long before the Cayucos native was
cranking the handle of a traditional grape crusher.
Then came punching down the fermenting grapes
and, later, helping transport the finished wine from
vat to cellar via bucket brigade.
This was the art of family winemaking and
Selkirk was hooked.
A general contractor, Selkirk began making wine
as a hobby. Finally, however, he realized he was
producing more than he could give away and
Cayucos Cellars was born in 1996.
Self-taught, Selkirk said he’s learned a lot from
other wine makers. Still, he tends to follow his own
instincts as a winemaker.
“I just prefer to do my own thing.”
That means relying exclusively on wild yeast
during fermentation and aging wine in neutral oak

barrels. He tries not to interfere too much during
the process, what he calls an “inspired benign style.”
His wines spend an extended period in the
barrel – anywhere from three to six years.
Patience, with a little bit of procrastination,
Selkirk joked, is the reason he leaves his wine in the
barrel that long.
“Everything in its proper time,” reads the
winery’s website.
That means visitors to the Cayucos Cellars
tasting room in downtown Cayucos – only a few
steps from the ocean – will find relatively older
vintages being poured.
Selkirk produces what he jokingly refers to as
the “five basic food groups”: Chardonnay, Pinot
Noir, Zinfandel, Cabernet Sauvignon and Syrah
under the Cayucos Cellars label.
Only the Pinot Noir is harvested from Selkirk’s
two vineyards near the winery. The other grapes are
grown primarily in the Adelaide and Templeton
Gap regions of the Paso Robles appellation. Selkirk
said he’s partial to head-pruned, dry farmed fruit.
The Cayucos Cellars tasting room is at 131
North Ocean Avenue in the old beach town of
Cayucos, about four miles north of Morro Bay. It’s

Paso Robles Digital Film Festival Uncorks in Wine Country Nov. 20-25
Highlights include a tribute to Clint Eastwood,
Music from the Bacon Broothers, The Kyle Eastwood Band,
Ramblin’ Jack Elliott and more.
In the heart of Central California’s “Cowboy Wine Country,” the
inaugural Paso Robles Digital Film Festival (PRDFF.com) will take
place Thursday, November 20 through Tuesday, November 25. The
theme for year one of what will be an annual festival examining the
film industry in the digital age is “Music In Film.” Headlining music
acts include The Bacon Brothers (actor Kevin Bacon and his brother
Michael), folk legend Ramblin’ Jack Elliott, The Kyle Eastwood Band,
The Brubeck Institute Jazz Quintet and more.
PRDFF will be Webcast worldwide and filmed for a DVD under the
auspices of veteran event producer Benford Standley. In 1995, Stan-
dley produced one of the first live multimedia Internet cybercasts, and
has continued to incorporate pioneering digital technologies into his
projects and productions, which include hundreds of events ranging
from Wild West Shows to music and arts festivals.
PRDFF highlights include: “Make My Saturday,” a tribute to the
musical and cinematic genius of Clint Eastwood that includes screen-
ings of the Eastwood-directed Honkytonk Man (starring Eastwood
and his son Kyle) and Bronco Billy; the documentary Martin Scorsese
Presents Clint Eastwood’s Piano Blues, produced by PRDFF advisor
Bruce Ricker, who will moderate a panel on Eastwood’s company
Malpaso; and a screening of the Ricker-directed Tony Bennett: The
Music Never Ends.
On Sunday, November 23, Academy Award-winning film editor
Joel Cox will receive PRDFF’s “Paderewski Lifetime Achievement
Award for Contribution to the World of Music and Movies.” Cox has
worked with Eastwood for thirty years on films including Bird, Million
Dollar Baby, Mystic River, Changeling and Unforgiven, for which he
won an Oscar.
In sync with the “Music In Film” theme, documentaries to be
screened also include: Martin Scorsese’s The Last Waltz, the Bob Dylan
documentary No Direction Home, D.A. Pennebaker’s Don’t Look
Back, Jonathan Demme’s Neil Young: Heart of Gold, Festival Express,
Crazy, Blues Accordin’ To Lightin’ Hopkins, Los Lonely Boys: Cotton-
fields and Crossroads and Ballad of Ramblin’ Jack. Many filmmakers
will be in attendance.
Also featured will be 3-D Films and an art show and roundtables
held at Martin & Weyrich Winery and in various locations in Paso
Robles – “Cowboy Wine Country just South and Sideways of
Sundance.”

School Resource Program in Paso Robles, which will be linked with

FALCON NEST WINERY

F
rancesco Grande was harvesting olives
when we spoke by phone recently. The
owner and winemaker of Falcon Nest
Winery in Paso Robles was in a grand mood
indeed as he spoke about the new banquet
room and tasting facility at the winery.
“It’s about 1300 square feet,” he says, his
Italian accent rich with laughter and happi-
ness. “It’s still kind of small, intimate and it
has a great view.” One could say it has a
“grande view” and that is certainly true.
Falcon Nest Winery is located on Union Road
in Paso Robles on the east side of the town.
The view is over the opulent 55 and a half
acres planted with Cabernet Sauvignon, Petite
Verdot, Merlot, Zinfandel and Syrah.
The tasting room and the new banquet
facility add-on are what Grande calls
“simple spaces.” The walls are white and
there are earth tones in the shelves as well as
simple black shelves. The floor is tile and
there are windows all around. After all, why
detract from the view? From the tasting
room, customers look out on all of Falcon
Nest’s vineyards. “I’ve still got 100 acres I
want to plant. But, I’ll do it slowly, over
time,” says Grande.

While it’s true that Falcon Nest is relatively
new, winemaking has been in the Grande
family for literally centuries. “We can trace
back our ancestry 200 years to the Grand
Duke of Tuscany,” says Grande. “My daughter
did some research and we found that out five
years ago.” Apparently, the Grande clan was
making wine and food even then. “My soul is
in it,” Grande says. But it wasn’t always that
way.
When Grande was a young man living in
Italy, the last thing he wanted to do was tie
himself down to one spot and work. “I
wanted to see and do the world,” he says.
Entering into the hotel business, Grande got
his wish. “I traveled all over and worked in
wonderful places.” 34 years ago, however, he
came to the United States and when he got
established, he opened a couple of restaurants
in California. “We had one in Santa Monica,
one in Fairfax and one in Simi Valley,” says
Grande.
The whole Grande family is involved in
Falcon Nest, of course. Grande’s wife Carol
works right alongside him at the winery and
his two sons, though living in San Fran-
cisco, design the labels, the foil-caps and
stay involved with their family while

history among other things.
It wasn’t until the last few years that the
Grandes made the move to the winemaking
life in Paso Robles and opened Falcon Nest.
Restaurants, though, are still in his blood.
“We plan to open one here at the winery one
day,” says Grande. Until then, Grande is
growing and curing his own olives and sells
breads, olives, olive oil, meats and cheeses
from the tasting room. “We want you to come
up and enjoy your time here. Taste some
wine, have some food, relax and live the
Italian lifestyle for a while,” Grande says.
Perhaps it is no wonder then that the
winery is called Falcon Nest. Falcons after all
are family oriented birds. They care for their
young a very long time and they provide a
home for their families in places where they
may or may not have been born. So it is then
that with an eye toward true hospitality while
producing about 5,000 cases of hand-crafted
wines per year, the Grandes have brought a
little bit of Italy with them to the Central
Coast and opened their hearth and home to
their customers right here.

Eberle Winery Donates $1 of all Rosé Wine Sales in
October to the National Breast Cancer Foundation
In an effort to support National Breast Cancer Aware-
ness Month, Eberle Winery is donating $1 of all Syrah
Rosé wine sales in October to the National Breast Cancer
Foundation, Inc. “Rosé is the perfect wine for fall,” says
winery owner Gary Eberle. “It’s great with turkey and
traditional holiday meals. But what I love about teaming
up with the National Breast Cancer Foundation is the
idea that we can actually make a difference in people’s
lives, one bottle at a time.”
Breast cancer is the most common cancer in women
in the United States and is the second leading cause of
cancer death in women after lung cancer. According to
the American Cancer Society, it’s estimated that about
178,480 women in the United States were found to have
invasive breast cancer in 2007. About 40,460 women
will die from the disease this year. Eberle hopes to raise
money to go toward research to find a cure.
Gary Eberle has a long list of credits to his career. In
1980, he co-founded the Paso Robles appellation and
later became a founding member of the Paso Robles
Vintners and Growers Association. He is also credited as

the first U.S. winemaker to produce a 100% Syrah and
remains one of the highest award-winning California
winemakers for his favorite wine, Cabernet Sauvignon.
Even the White House knows Eberle wine. President
Ronald Reagan chose Eberle Cabernet to take on his
historic trip to China in 1985. And in 2003, Governor
Arnold Schwarzenegger served Eberle wine when Presi-
dent George W. Bush visited California.
Eberle was the first to create underground caves in
San Luis Obispo County to age all of his wines.
Currently, Eberle ages 3,000 barrels in 17,000 square
feet of underground caves located 35 feet below the
winery. Tours of the caves are offered every half hour,
daily, and are complimentary. All wine tasting at Eberle is
complimentary as well. The Wine Spectator calls the
tours at Eberle “One of the best tours on the Central
Coast!”
The 2007 Eberle Syrah Rosé ($16) is available at
Eberle Winery. The winery is located at 3810 Highway

Kick Off the Harvest Celebration Weekend with
Tolosa Winemaker Dinner, Barrels R Art Auction
Tolosa Winery will host an amazing winemaker dinner on Friday,
November 7. Maegen Loring of the Park Restaurant in San Luis
Obispo will work her magic in the Tolosa kitchen, pairing each course
with the finest of Tolosa wines. As part of the evening’s fun, six one-
of-a-kind wine barrels – creations by six local artists – will be
auctioned to benefit the TEACh Foundation (The Endowment for the
Education of Children) and the San Luis Obispo Vintners Association.
Tickets are $100 and can be purchased by phone at (805) 782-0500.
Tolosa Winery commissioned six local artists to participate in this
inaugural fund raiser event, Barrels R Art. “Our mission is to provide
a platform for local artists to apply their talent and showcase their
creative synergies to another great art form: the creation of wine,” said
Bob Schiebelhut principal at Tolosa. Each artist was given a 60 gallon
barrel to transform into their unique work of art. Each barrel will be a
one of a kind original.

North Pole, holiday carolers and special treats from Santa Barbara
Maritime Museum.

Boat Parade beginning at 5:30 p.m. This year’s boat parade theme is
“23 Skidoo.” This American slang phrase became popular during the
Roaring Twenties. Best viewing locations include Stearns Wharf and
