ARROYO ROBLES WINERY

B
akersfield isn’t that far from Paso
Robles, at least as the crow flies, but
the two regions are vastly different in
terms of most everything, including wine.
Quite frankly, there aren’t any wines in
Bakersfield. But Paso, now that’s a different
story. Bob Shore grew up in Bakersfield and is
the kind of guy who can do anything well.
Originally in the oil and gas business as a
petroleum engineer, he moved into farm
management using his background in earth
sciences, then into wine.
His tasting room in downtown Paso
Robles could not be more perfectly sited for
its needs. The prime location is bright and
airy, with large windows looking into the
park. Currently producing about 3,500 cases,
Bob’s wines are well priced and promoted by
word of mouth. The goal is to reach about
6,000 cases and with distribution currently in
30 states, he’s well on his way to achieving
that goal, too.
Arroyo Robles opened their tasting room
in March of 2006. But their foray into wine
began much earlier. Bob was born and raised

in Bakersfield and got into the gas and oil
business, “for thirty successful years,” he said.
During that time he toyed with homemade
beer and wine, but didn’t take it too seriously.
But then the opportunity arose for he and his
brother to go into business together, and they
bought a lab in Visalia, California that focused
on soil, pedial and water analysis, predomi-
nately for the agriculture industry in Cali-
fornia’s fertile Central Valley. “We quickly
gravitated toward supporting the wine
industry, recommending rootstock, nutrient
programs and high altitude photography for
soil mapping,” Bob said. They parlayed the
business into being consultants across the
state for both large and small wineries.
They originally bought a vineyard across
the street from Tobin James as an experi-
mental vineyard to employ different growing
techniques such as trellising, canopy manage-
ment and stressing the vines. But again timing
played a roll. The chance to sell the property
at a nice profit arose and they used the funds
from that sale to buy their current vineyard
off San Marcos Road. Then in 1997, they
were asked if they wanted some Merlot fruit
from Bien Nacido Vineyard. “We made 55

cases of fabulous Merlot,” Bob said. From
there it was only a matter of time before they
launched their own label.
Located directly across from Paso Robles’
downtown historic city park, Arroyo Robles
offers wine of course, but also a plethora of
other items in their well stocked tasting room,
including books, multiple gift items and
maple syrup and pancake mix – a sort of
homage to a property they owned back in
Vermont. Even now they offer a pancake
breakfast before all the major wine festivals in
town.
One of their former properties was
studded with oak trees and had an arroyo, (a
Spanish term for creek) running through it,
so the name flowed quite easily. The tree itself
is actually a specific tree, one of the many
oaks that line Highway 46, though it’s on
someone else’s property.
Arroyo Robles is family owned and they
are proud of it. “There are some real pluses in
working with my kids, my wife and
grandson. Being a family owned business, it’s
a little more real, we all pick grapes, crush
them and move barrels around,” Bob
confided. He paused and thought for a

moment about his last comment.

“There are times when being a
winemaker is priceless.” Bob’s

A broad portfolio of wine is
made by Bob including the stan-
dard offerings like Chardonnay,
Zinfandel and Syrah, but they
have also branched off into Viog-
nier, Tempranillo, two Rosés and
several Ports. Not one to rest on
his laurels, Bob also produces
two sparkling wines, one of
which is a sweet almond
sparkler. Fine Wine...
And the people keep coming.

movie Field of Dreams: If you
make it, they will drink it. And
Paso Robles is bulging with new
wineries. “The more people that
come here to make really good
wine only benefits Paso Robles,”
Bob believes. His own approach
to wine is low key and modest.
“If you can make bread and wash
dishes, you can make wine,” he
advises. Certainly it’s not that
simple, but fortunately, Bob
Shore and his family keep the
rest of us happy by consistently
producing great wines with a
local influence.

ANGLIM WINERY

I
t all started in January when Anglim Winery’s
2005 Viognier earned a gold medal at the San
Francisco Chronicle Wine Competition.
Then midway through the year, their 2005
Zinfandel and Grenache wines each won a gold
medal at the San Francisco International Wine
Competition – one of the largest and most influen-
tial international wine competitions in the country.
Further acclaim came when Robert Parker’s
Wine Advocate magazine gave their 2006 Viognier
an “outstanding” 90-point rating.
“It is great to have our wines win such recogni-
tion, but it’s also a wonderful experience to see
people enjoying them in our tasting room and get
their feedback,” said Steffanie Anglim.
The critically acclaimed 2006 Viognier was made
from grapes grown in the Bien Nacido Vineyard in
Santa Maria. “They are widely considered to be a
top producer. Their fruit is beautiful,” Steve Anglim
said. “The Viognier grapes had a remarkable core of
acidity balanced with ripe fruit flavors.”
Fermented cold, the Viognier was evenly distrib-
uted in three types of containers: neutral French oak
barrels, stainless steel barrels and stainless steel
tanks. The result is characteristics of apricots and
honeysuckle tones balanced by a hint of tangerine
blossom and a mineral finish. It is still available –
but probably not for long – at $24 a bottle.
The fruit for the award-winning 2005 Anglim
Zinfandel came from St. Peter of Alcantara Vine-
yard, a small estate on the west side near Templeton.
A rich and lively wine, the Zin was made the way
Zinfandel used to be made, according to Steve, and
has “a bright fruit core, with a richness and

complexity that comes from the dry-farm process,
which concentrates the flavor.” Although the 2005
Zinfandel is sold out, Anglim has just released the
2006 vintage.
The highly touted Grenache is still available, also
for $24 a bottle. This “fruity and spicy” blend
contains 20 percent Syrah. “It was one of my Holy
Grails. Grenache grapes can be both frustrating and
rewarding. They want to overproduce, which
dilutes the intensity, so I had to find growers who
don’t allow that to happen. Then I added some
Syrah for depth and structure, and a little more
color,” Steve explained.
When you visit Anglim Winery’s tasting room in
downtown Paso Robles, located a few blocks off the
park at 740 Pine Street, not only do you get to
sample award-winning wines, but you also get a
taste of history. Located in the old Paso Robles rail-
road depot, the tasting room contains the original
flooring and windows of the old train station and
attracts a number of train buffs, in addition to wine
lovers. It all makes for a lively atmosphere, Steffanie
says. “We want people to feel comfortable in our
tasting room, whether they are new to wine tasting
or old pros.”
On three Saturday nights in August – 16, 23 and
30 from 5 to 7 p.m. – you will also find working
artists and live music in the tasting room, as Anglim
Winery participates in the Paso Art, Wine and Song
event going on at all of the downtown wineries.

CASTORO CELLARS
A Celebration of 25 Years

C
astoro Cellars is celebrating its 25th wine
making anniversary with customer apprecia-
tion events, concerts and the release of their
proprietary anniversary blend. Dubbed Venti Cinque
Anni, Italian for 25 years, the blend includes
Castoro’s Syrah, Cabernet Sauvignon and their
famous Zinfandel as well as some others.
The Castoro name, which means “beaver” in
Italian, comes from a boyhood nickname that Niels
had. It has come to be the symbol for the winery that
calls its product, “dam fine wine.”
With a focus on sustainable practices and farming
vineyards with a minimum of synthetic products,
Castoro has become one of the “old school” wineries that has consis-
tently focused on hand-crafted quality wines. Winemaker Tom Myers,
along with owners Niels and Bimmer Udsen, already have 100 acres
of Castoro vineyards certified organic by the California Certified
Organic Farmer’s Association and Castoro is dedicated to continuing
their work.
Niels Udsen and the crew at Castoro have also been working hard
to get the new Whale Rock vineyard up and running. A west side vine-
yard in Paso Robles with cool afternoon and evening ocean breezes,
the vineyard will be dedicated to Chardonnay and Pinot Noir.
Castoro Cellars began the festivities on July 26th, celebrating
the summer with its annual Al Fresco Dinner featuring San Luis
Obispo caterer, Upper Crust. The dinner focused on Italian
dishes paired with Castoro wines and Mike Maguire, a local
musician, was the entertainment for the evening.

On August 10, Castoro will offer its free Lazy
Local Concert featuring the band New Five Cent.
Pack a picnic and come to Castoro from 1 to 4 p.m.
to relax, enjoy the music and sip the wine. In addi-
tion, on August 23rd. Pepino D’Agostino will give a
concert at 7 p.m.
Finally, Castoro will celebrate its silver anniver-
sary with Customer Appreciation Day on September
6th from noon to 4 p.m. The day will be replete
with free entertainment from Louie Ortega and
discounts on wine along with complementary food.
With 550 acres of vineyards throughout the Paso
Robles AVA, Castoro continues to focus its attention
on creating wines that impress. Paso Robles’ rela-
tively new trend of creating quality Pinot Noirs is
headed by wineries like Castoro. “We thought it was time to use that
coolness we get on the west side to our advantage. Pinot in particular
does well in that climate,” says Udsen. Indeed, Castoro’s wines are all
doing well and their 25-year celebration puts customers right at the
heart of their success.
Tasting wine at Castoro Cellars’ tasting room, located in the heart
of the Paso Robles wine appellation at 1315 North Bethel Road in
Templeton, just off Highway 46 West, is free for three samples of wine,
$3 for seven samples (which is waived if wine is purchased) and $5
for seven samples and a logo wineglass. Wine club benefits include six
bottles every three months and generous discounts on featured wines,

INTELLIGENCE FOR THE WINE CONSUMER
What is malolactic fermentation?
This term refers to a secondary fermentation process that takes
place after the initial alcoholic fermentation is complete. Its contri-
bution to a wine includes flavor enhancement, acid reduction and
stability for aging.
Acids are some of the components that are present in wine after
primary fermentation, along with alcohol, tannin and other
compounds that together create a balanced and tasteful wine. One of
the acids, malic acid, can sometimes be desirous in certain wines,
like Riesling, and in others, like Chardonnay, it may create a crisp
sharpness.
Whether or not this is beneficial to the enjoyment of the wine is
up to the winemaker. But in cases where the level of acidity creates
some unpleasant characteristic to the wine, then a reduced level of
malic acid is needed. To achieve this, malolactic fermentation will be
started that converts the harsher malic (and some citric) acid to
softer lactic acid. You can associate malic acid with the kind found in
apples and lactic acid with that found in milk.

Upon completion of the malolactic fermentation, the wine’s
flavors become a little more pronounced and texture a little rounder
on the palate. The process has an added bonus of helping to make
the wine less susceptible to problems triggered by bacteria while
aging in the bottle.
Most red wines have undergone malolactic fermentation along
with many Chardonnays. The result is a smoother, more interesting
wine with greater long-term potential.

17th Annual Basil Festival Set for August 16, 17
An action-packed weekend is planned for the 17th annual Basil
Festival on Saturday and Sunday, August 16 and 17 at Lone Madrone
Tasting Room and Organic Herb Farm. Lone Madrone is located at
2485 Highway 46 West in Paso Robles (the old Sycamore Farms
property). Proceeds from this year’s event will benefit KCBX FM
public radio, with a portion going to the Paso Robles Boys & Girls
Club.
This year’s festival takes advantage of the lovely Paso Robles

summer evenings by running from noon until 8 p.m. on Saturday
night. Patrons will discover the refreshing taste of basil beer and basil
ice cream, great wine and local cuisine while grooving to the tunes
of local musicians Three-Quarter Time and Ras Danny and the
Reggae All-Stars.
There will be a pesto contest on Saturday judged by local
celebrity judges. Prizes will be awarded in three categories: tradi-
tional pesto, original/creative recipe and crowd favorite. All pesto
contest entrants will receive a complimentary 250 ml bottle of Olio
Nuevo organic olive oil. Pesto entries must be checked in by 1 pm
on Saturday, with a minimum of 2 cups per entry and must be
accompanied by an entry form. Festival goers may purchase pesto
sampling tickets for $3, which allows a vote for crowd favorite.
Judging starts at 2 p.m., with winners and prizes announced at 3:30.
Winning recipes will be published locally and on Lone Madrone’s
website. Entry forms are available at Lone Madrone and KCBX, via
email info@lonemadrone.com, and will also be available on site the
day of the festival. South County residents may drop off their entries

An exciting raffle is planned for Saturday evening, with a grand
prize of two tickets to Jamaica! Raffle tickets are $10 each, and three
for $25, with a range of valuable prizes including local artwork, gift
certificates for fine local restaurants and hotels, jewelry, and more.
Raffle winners need not be present to win. The raffle will take place
at 6 p.m. Proceeds from raffle ticket sales go to the charities of the
day.
The whole family is encouraged to come out to enjoy delicious
local food, unique vendors, fun activities for kids, and live music.
Artists and local craftspeople will be displaying their wares,
including onsite organic lavender oil distillation and a glass blowing
demonstration. Admission to the festival is a suggested $5 donation
per adult (children are admitted free).
Sunday’s activities begin at 10 am with a “Green Eggs & Ham”
brunch created by Chef Jeffrey Scott; prices are $5 for kids, $10 for
adults. Professional storyteller Steve Crouch will be entertaining
children and parents alike with his Native American influenced
stories, and children’s activities will also be available.
Last year’s event raised over $6000 for the Make a Wish Founda-
tion, and we are hoping to exceed that this year to support both
KCBX public radio and The Boys & Girls Club of Paso Robles.

D
iscover the Wine Country of Paso Robles,
the premier growing region of California’s
Central Coast, and Eos Estate Winery,
which has become a leading producer of award-
winning wines and a destination spot for trav-
elers. The spectacular 104,000-square-foot
Romanesque facility is surrounded by 700 acres
of beautiful estate vineyards. Towering Cyprus
trees line the entrance to the Eos Estate Winery,
which was the name given to the “Goddess of
the Dawn” in Greek mythology. The legend was
that every morning Eos lifted the sun over the
horizon to start a new day.
The production of Eos wines is unique in
many ways. Prior to planting, each vineyard row
is deep trenched to the appropriate depth to
allow water and roots to effectively penetrate the
compacted earth. Selection of clones is deter-
mined based upon terroir and targeted flavor
profile. Throughout the growing season, special
attention is paid to leaf removal and crop thin-
ning. Drip irrigation is employed for complete
control of a watering regime for the vines.
A 24,000-square-foot, temperature- and
humidity-controlled barrel storage facility was
built in 1999 to accommodate the winery’s
growing number of French and American oak
barrels, necessary for the production of world-
class wines.
The estate-bottled Eos portfolio includes
Chardonnay, Sauvignon Blanc, Cabernet Sauvi-
gnon, Zinfandel, Petite Sirah, Merlot, and two

stunning dessert wines: a Late Harvest Moscato
called “Tears of Dew,” and a vintage dated Estate
Zinfandel Port.
The Reserve Eos line includes the “Cupa
Grandis” Grand Barrel Reserve program.
Featuring grapes sourced from the top Eos
Estate Chardonnay and Petite Sirah vineyard
blocks, the wines are handcrafted using the
world’s finest cooperage. The Cupa Grandis
Chardonnay is fermented and aged in 100-
percent new Louis-Latour French oak, consid-
ered the finest in the world, and the Petite Sirah
uses a selection of barrels from specific forests in

Concerts
The City of Atascadero and Food 4 Less present Saturday in the
Park, Summer 2008 Concert Series. All concerts are held at the Atas-
cadero Lake Park Bandstand from 6:30 to 8:30 p.m. The concerts are

Sylvester Vineyards and

Winery Presents its New
Wine Park and Events Center
Sylvester Vineyards and Winery recently opened its new events
center to the community of San Luis Obispo County. Sylvester Vine-
yards has been a local winery in the Paso Robles area since 1995. The
name Sylvester was not only chosen after the owner Sylvester
Feichtinger but also for its Austrian meaning of “celebration.” Since the
opening of the tasting room Sylvester Vineyards and Winery has
received several prestigious awards for their two reserve wine labels.
Through the years of recognition Sylvester Vineyards and Winery has
continued to grow creating new avenues of entertainment for their
customers to enjoy.
Sylvester’s new Wine Park and Events Center was created in March
2008 and was finished just in time for the Paso Robles Wine Festival
that took place May of this year. This 50,000-square-foot outdoor
events center lies on the property adjacent to the Sylvester Winery
tasting room and is surrounded by several varietals of grapevines. This
lush outdoor center includes a 20-foot amphitheater and stage, an
available outdoor kitchen, three vintage Pullman train cars from the
1940s which are open to the public and pond with rock waterfall
which is home to two beautiful swans. This unique events center gives
customers an Old World feel with the charm of the winery’s scenic
view and family traditions. Currently the Wine Park and Events Center
is available for both public and private functions.
Sylvester Winery is also hosting its Summer Sunset Series of events.
Customers and wine club members alike are welcomed to join the
festivities that include a variety of events. The next event will be an
Open Mic night on August 16th that will feature talented, local

The vines have been painstakingly planted around an innovative
trellis system that maximizes the amount of sun each cluster receives
and allows for optimum flavor development and color maturity. Carl,
a perfectionist when it comes to growing grapes, has chosen to plant
seven varieties that include Cabernet Sauvignon, Merlot, Cabernet
Franc, Petite Verdot, Syrah, Petite Syrah and Muscat Blanc to produce
his artisan wines.
And the McCasland’s attention to detail did not stop with their
grapes. They hired arguably the most charming hostess on the Central
Coast to greet their visitors. Rosie holds court from Friday through
Sunday in the Penman Springs tasting room. An emigrant from
Nicaragua, Rosie sets a tone for the tasting room that is at once both
professional and inviting, gently joking with her guests while

Tolosa Blends Fine Wine, Fine Art to Benefit Local Schools

Tolosa Winery has commis-
sioned six local artists to partici-
pate in their inaugural fund-
raising event, Barrels R Art. “Our
mission is to provide a platform
for local artists to apply their
talent and showcase their
creative synergies to another
great art form: the creation of
wine,” said Bob Schiebelhut

was given a 60 gallon barrel to
transform into their unique work
of art. Each barrel will be a one
of a kind original.
The barrels will be on display
in the Tolosa Tasting Room from
July 26th to September 5th.
There will be a gala dinner

auctioneer Gil Stork as Master of

Santa Maria – The Hidden Jewel of Santa Barbara

Over the years the landscape of the Santa Maria Valley has steadily
evolved and, unbeknownst to many, offers one of the most unique

Learn About Sushi and Wine at Riverbench Winery
Contrary to popular belief, sushi goes with more than just sake.
Join Riverbench Winery as they explore some innovative combina-
tions of Riverbench wines with sushi rolls and sashimi creations by
Chef Jeff Fujiwara, Saturday, July 26, from 1 to 4 p.m. Limited open-
ings, so make reservations. The event is $20 for Benchmark Club
members. not-yet-members are $25.
Riverbench Vineyard was established in 1973, when its first
Chardonnay and Pinot Noir grapes were planted on the property. For
years since then, some of the most renowned wineries in Santa
Barbara County have purchased the fruit for their own wines. Over
time Riverbench has become a prominent name for high-quality
Chardonnay and Pinot Noir in the Santa Maria Valley.
In 2004, a group of local families purchased the property. Wine
drinkers themselves, the owners quickly became enamored with the
wine industry and decided to start producing their own wine label
using small quantities of their exceptional fruit. Riverbench Winery
was born.
The first vintage included both Estate and Reserve versions of
Chardonnay and Pinot Noir. Since then, their portfolio has increased
to include new interpretations of these noble varietals. All Riverbench

Cinema e Vino.
Cinema e Vino partners with selected California Central Coast
wineries to create romantic evenings for people who enjoy wine
tasting, Italian cuisine and watching great movies. The company,
founded by Gina DeGirolamo and Melita Toscano, turns scenic
wineries into romantic vineyard cinemas.
The evening begins with a private wine tasting at select vineyard.
Guests are then escorted to a scenic vineyard theater, staged with
comfortable chairs and cozy blankets. Once seated, your gourmet
Tuscan dinner basket is served, freshly prepared and warm from the
oven. Under a canopy of stars and with friends, family or that very
special someone by your side, a film flickers to life on the screen.
