VIHUELA WINERY
Hitting the High Notes

W
ine has a propensity to bring things
together: Pinot Noir and lamb;
Cabernet and steak, and my favorite,
Chardonnay, popcorn and goat cheese. Great
partnerships too have evolved because of
wine, such as Opus One bringing together
American and European sensibilities. And
then there’s Matt and Mike from Vihuela
Winery. They both grew up in Orange
County, they both moved to the Paso Robles
area, and they both worked with computers,
which is how they first met. Now they both
work with wine. Though their last names
have become irrelevant within the context of
Vihuela Winery (pronounced Vee-wa-yah),
these two best friends have proved that with
focus, dedication and knowing the precise
roles to play, anyone can become successful in
the Paso Robles wine game. Vihuela is
Spanish for “guitar” and their wine labels
feature an elegant guitar on them.
“Matt and I met in the IT industry. For
him, this winery this has been a life long
dream,” Mike said. Prior to their meeting in
the computer industry, Matt had obtained his

enology degree from Fresno State. When the
two met they became fast friends and over
lunches and Matt would speak of his dream
of starting a winery one day. Because of Matt’s
passion and enthusiasm Mike was drawn in
to the idea due to Matt’s conviction. “We’re a
good fit. Before Matt could even finish the
sentence about becoming partners, I wrote a
check,” says Mike. Though Matt always had
the passion, wine wasn’t something Mike
never saw himself moving into. “For me, if
there was something that primed me for the
wine industry, it was my mom who was big
into food and wine.” But that was pretty
much minimal exposure. Mike, being the
more gregarious of the two, quickly became
the “face” of Vihuela Winery while Matt was
more suited to the vineyard. “I talk to people
at trade shows and festivals and Matt talks to
the vines in the vineyard. He’s sort of like the
vine whisperer,” Mike joked. But this under-
standing of their respective roles has served
them well. “We leveraged our strengths,”
Mike stated. “Matt owns and runs the vine-
yard and I own and operate the winery, we
work together to make the wine; Matt as the

science, me as the art.”
The interior of their tasting room has
exposed brick walls and exposed painted
wood rafters. Local art rotates every two
months and live music is offered on Friday
and Saturday nights in courtyard of neigh-
boring Wine Attic. Their wine club has some
exceptional benefits, including a 35 percent
case discount the day you sign up, and up to
a 30 percent discount on wines. They only
make one white so far, a Chardonnay, with
the focus being on Syrah and Cabernet Sauvi-
gnon. “We’ll be doing a white Rhône blend of
Marsanne, Eousanne and Viognier to round
out what we offer with the whites. But Matt’s
experience is with big reds and Bordeaux
varietals,” Mike mentioned. Then there is
their signature blend called Concierto del
Rojo, meaning “concert of red,” an
unorthodox blend of Syrah, Merlot and Petite
Verdot. They hope to add something new to
their line up of wines each year, something
innovative to keep it fresh.
They are happy to create gift baskets using
their wine and the locally made gourmet
items they sell. They also include classical

guitar music as well in their

baskets. They also make their
own breadsticks which are quite
good. “Our grand opening was in
2005 with the Paso Robles wine
festival,” Mike said. The tasting
room opened in January 2008 for
them to gain more exposure.
“You either invest more in adver-
tising, or open a location to
advertise for you,” Mike said of
the comfortable tasting room.
“Paso Robles is becoming like a
little Healdsburg, but it has it’s
own flair, it’s developing in a very
positive direction,” he believes. Fine Wine...
And certainly the people keep

weekend mini concerts, they
became acquainted with a band
called Incendio, based out of Los
Angeles. Eventually the winery
and band formed a partnership
of sorts and Incendio even wrote
a song called “Vihuela.” In turn,
Vihuela Winery named one of
their wines Incendio and a
unique CD and wine combo will
soon be available. This all fits
into the idea of what Matt and
Mike are aiming for, namely a
personal touch to their wines,
something that speaks from their
heart to yours.

BIANCHI WINERY
Wines to be Enjoyed with Family and Friends

B
ianchi Winery is keeping busy through
the summer and releasing some new
wines to prove it. Called “The Signa-
ture Selection,” it features Italian varietals and
includes two 2005 offerings including
Barbera from the San Juan vineyard and
Sangiovese from Paso Robles. Bianchi also
released their 2007 Santa Barbara County
Pinot Grigio.
On August 23rd, the Paso Olive festival
will be held and Bianchi will be pouring
selections along with other wineries and, of
course, local olive and olive oil producers
who will be showing off the diversity of Paso’s
produce.
The fall will see Bianchi’s Harvest Dinner
on October 18. Chef Chris New from Level 4
restaurant in Paso Robles will be creating
dishes paired with various Bianchi wines.
The Bianchi story begins not in Paso
Robles, but in the Central Valley. In 1992,
Joseph Bianchi’s son Glenn took over the
Central Valley operations but he grew restless.
He wanted to bump up the quality of the
wine and make some profound changes.
Indeed, the younger Bianchi revamped the

eight different ranches and continued in the
bulk wine business. But by 2000, he knew it
was time to move west and that is precisely
what he did.
Setting up shop in 2000 in Paso Robles,
the Bianchi’s purchased 40 acres of land and
began a correspondent search for quality
grapes. 22 of the acres Bianchi purchased
were taken out and replanted with superior
vines of Syrah, Cabernet Sauvignon and
Merlot. Bianchi Winery began to produce
quality grapes and quality wine. The first
harvest and crush in Paso Robles was in 2004
and by 2005, winemaker Tom Lane joined
the team and Bianchi was well on the way to
a whole new life.
“I’d been involved in the U.C. Davis grad-
uate program,” says Lane “and worked for
seven years at Navarro Vineyards [in the
Anderson Valley] as well as 10 years at
Concannon before I came here.” Lane is from
Livermore originally where Concannon is
based. As part of Concannon’s winemaking
team, Lane purchased Paso Robles grapes and
knew their worth. “My wife and I love it here.
It’s really a great place to make wine,” he says.
Bianchi’s Paso Robles operation is the only
winery on Branch Road off of Highway 46
East. It stands alone in many other ways, too.

Producing a little less than 15,000 cases of
wine a year, Lane says his largest bottling is
only 1400 cases. “We’re into a lot of varietals
and we kind of take our time with each one,”
he says. There are now 28 estate acres of vine-
yard from which Lane gathers the fruit and he
travels up and down the state looking for
quality sources. “I get Sauvignon Blanc out of
Lockwood because I really like how it doesn’t
have that over-powering grassiness to it. We
get Chardonnay out of the Edna Valley and
Santa Maria and Pinot Noir out of Santa Maria
as well,” he adds. There’s Pinot Grigio from
the Los Alamos area and some Italian varietals
as well from the Paso area.
But the attention to detail in each varietal
has paid off. The 2005 Zinfandel from Paso
Robles won the Gold medal from Jerry Mead’s
New World Wine Competition and took third
place honors in the 2008 San Francisco
Chronicle Wine Competition. In the Pinot
Noir Shootout featuring some 300 Pinot
Noirs, Bianchi took third place with their
Pinot that retails for between $25 and $30 a
bottle. Impressive standings from a truly
stand alone winery.
That quality can be attributed to Lane’s
dedication to his craft. “Everything is a blend
to me,” says Lane speaking of his winemaking

style. “Whether or not it’s a single varietal, it’s still a blend. I might be
making Cabernet Sauvignon, but I’ll use fruit from our Estate Clone
eight while my neighbor grows Clone 337 and I’ll put the two
together.” Lane also argues that the type of barrel used, the type of
yeast, the various techniques depending on what is called for make all
of his wines “blends.”
Still, Lane does blend fruit and has come up with some wonderful
successes most of which can only be purchased at the Paso Robles
tasting room. “We make a traditional Bordeaux blend of Cabernet
Sauvignon, Cabernet Franc and Merlot that I really like,” he says. It’s
called TreVino. Lane also experimented successfully with a blend of
Pinot Noir and Syrah that he calls “Syranot” and it, too, is quite
popular.
Bianchi’s main focus has been on the tasting room and on restau-
rants but bottle shops are carrying the wines more and more. The
quality of the fruit combined with Tom Lane’s attention to each vari-
etal and each detail has made the Bianchi name stand out in a crowded
field.
“I don’t actually drink wine every night,” Lane says. “But we
certainly do enjoy it when we do.” The Lane’s have three children, two
daughters who are off pursuing college and careers and a son in high
school as well. Lane’s own advice about enjoying wine could be the
motto for Bianchi itself. “The best glass of wine is the one that’s
enjoyed with family and friends and you’re not focusing so much on
the wine, but on life.” Indeed, quality comes from making something
that enhances your customers’ lives. That too describes Bianchi.

SAN MARCOS CREEK
W
here “fine wine begins at the vine...”,
San Marcos Creek Vineyard special-
izes in small lots of hand-crafted,
single-vineyard, estate-grown and produced
varietals. They are a family-owned and oper-
ated vineyard and winery.
In the early 1990s, Fling and Annette
Traylor began looking for a way to retire to
the scenic Central Coast, not a lazy retire-
ment, but something that would get them
involved with the community and provide
some fun and excitement. They decided to
take advantage of the area’s increasing, but
still fledgling, reputation for quality wine-
grapes, and planted 43 acres on the property
they had purchased in 1980 just five miles
north of Paso Robles.
San Marcos Creek Vineyard was estab-
lished in 1992, and successfully developed
contracts with several local wineries such as
Peachy Canyon Winery, Meridian Vineyards,
Castoro Cellars and more recently J. Lohr
Vineyards & Wines, Treana Winery and
Rosenblum Cellars. However, as the Traylors
became more involved with the Paso Robles
wine industry, their plan for a quiet retire-
ment of growing winegrapes gradually
evolved into plans for a winery, a tasting
room, and a bed and breakfast!
As curious passersby watched, a striking
set of buildings gradually began to take shape

alongside Highway 101. As people who
know him will attest, Fling doesn’t do things
halfway. He believes that “a solid work ethic
and sweat equity can make a great deal of
luck and magic happen...” So it should come
as no surprise that the San Marcos Creek
facilities are top notch, featuring state-of-the-
art processing facility and a fully equipped
onsite laboratory.
With the expansion of their “retirement”
dream Fling and Annette were also able to
realize another dream, that of developing a
family business. To that end, daughter
Catherine Winter and her husband Brady
came on board in 2002, and are operating
partners in San Marcos Creek Vineyard.
Brady now heads up the winemaking aspect
of the label along with longtime local wine-
maker, Paul Ayers while Catherine manages
the tasting room and handles the financial
side of the business.

established with their first crush in
September of 2002 and then the bottling of
653 cases in July of 2003. Currently their
production has grown to 4,500 cases per year
of their fine estate wines.
The San Marcos Creek Vineyard lineup
draws from many regions: Bordeaux, the
Rhône Valley, Italy, and – of course – Cali-
fornia, are all represented in the list of
current releases which includes White
Merlot, Cabernet Sauvignon, Zinfandel,
Merlot, Syrah, Nebbiolo, Petite Sirah and
Late Harvest Zinfandel along with some new
Proprietary blends. The wines are balanced
and fruit forward in style, and exhibit the
classic characteristics for which Paso Robles’
wines are known.

of 2004, announced only by a simple “open”
sign put out near the driveway and is now

INTELLIGENCE FOR THE WINE CONSUMER
What can be learned from
observing a wine’s color and clarity?
I recently opened a bottle of red wine, vintage 1985. It poured out
of the bottle with the color of an old brown-brick building, and my
immediate comment was “Perfect!” You can’t always judge a wine by
its color, but often a visual inspection provides clues to its age and
sometimes quality.
Young red wines show a deep purple more than red. After aging a
few years, the color becomes more ruby-like. With an age of 10 to 20
years, or more, the color is lighter and takes on a tinge of brown at
least around its edge, if not throughout.
As red wines turn a little lighter with age, white wines take the
opposite path. Young white wines start very pale, maybe even with a
greenish hue. As the wine matures, the color of straw yellow is normal.
As white wines age to near 10 years and older, the color deepens to an
attractive golden yellow.
Exceptions apply to sweet white wines like Sauternes, which are
almost never pale and will become deep amber-yellow with age, and
also with light red wines like Beaujolais, which rarely become deep in
color, at any age.
Wines made from different grape varietals posses different shades.

For example, Sauvignon Blanc, Pinot Grigio and Riesling are paler
than Chardonnay, which tends to be more yellow-gold. For reds, Pinot
Noir, Sangiovese and Beaujolais are more translucent than Cabernet,
Merlot or Syrah.
Judging a wine’s clarity involves holding the glass up against a white
background. A white wine should be clear and bright while a red wine
will be densely pigmented with color, depending on the grape variety.
It may even have a little sediment, depending on its age, and still be
pleasing and safe to drink.
The key is to look out for cloudiness in the wine. A bottle of very
old red wine, say, more than 20 years old, may become a little cloudy
when moved because the sediment is agitated. This is normal. My
1985 bottle was decanted to separate the wine from its sediment.
But a permanent, dull, cloudiness in wine is a bad sign. Fortunately,
the quality of wine these days is so good that this is highly unlikely.

Focus on Wine Education

I
t’s probably no surprise that Allison
Dominguez and Ali Rush Carscaden went
into business together. It may even be less
surprising that they opened a wine bar
together. After all, the two college friends who
graduated from Cal Poly San Luis Obispo
were educated right here in Wine Country.
Carscaden even eventually earned a somme-
lier certificate and went to work for the Henry
Wine Group. But it was 15 Degrees Celsius, the pair’s Templeton wine
bar and shop that brought them together.
Opening last December, 15°C, as it is known, is more than just a
place to buy a bottle. “We’re really focused on education and we like
people to know what they’re buying as well as what they’re tasting,”
says Dominguez. The duo even holds classes under the auspices of
their alma mater on wine. “We really talk about the sensory experience
as well as a pretty extensive presentation on wine regions around the
world,” says Dominguez. “It got so popular, that we now hold our
own wine university, not affiliated with Cal Poly, for our customers.”
15°C is also dedicated to finding wines from every region of the
world. “We focus on imports and really bring regions to life with our
tastings and pairings.” Nevertheless, the shop also has a wide selection
of local area wines, even some that are hard to find.
The wine bar itself is located in a strip mall next to a Trader Joe’s
and some other shops in the heart of Templeton just south of Paso
Robles. Both Dominguez and Carscaden designed the shop using
vibrant and warm colors on the walls, a simple concrete floor and a
polished metal bar with brightly colored stools to enhance the sensory

experience. “We hired a Cal Poly architect
graduate to put our ideas on paper,” says
Dominguez, “but we did a lot of the construc-
tion ourselves, with help from family
members. It was an organic and growing expe-
rience for all involved.”
Interestingly, wine growing regions have
not historically had a lot of wine bars or shops.
It’s left to the winemaker to provide the
product. 15°C is among a new trend in such
places to cull together all the great experiences
from wineries and show them off. “We had talked to the owners of the
Wine Outlet [in Atascadero] and knew that they were closing down.
We wanted to fill that void,” says Dominguez.
Offering a selection of freshly baked breads as well as imported and
even local cheeses, 15°C has become the Central Coast spot for
learning about, tasting and experiencing these extraordinary flavors.
“We do a lot of tasting events and pair our cheeses and other foods
with our wines and really get customers into that sensory experience,”
Dominguez says. It’s that sensory experience that keeps bringing
customers back for more.
This month, 15°C will host several pairings and tastings with Chef
Jeff Scott including sushi with Champagne, sake and Syrah on August
21 and “Exploring the senses ... sweet, satly, tart” on August 28. The
now popular Wine University created by the ladies gets under way at
6 p.m. on Wednesdays. The cost is $250 per person and reservations
are required.

Just a few years
ago women wine-
makers were a
novelty. Only a
handful of persistent
and talented females
were able to push
their way to the top
in a very competi-
tive field. More and
more though,
women are not only at the helm of some very prestigious wine oper-
ations, they are also garnering their share of accolades and awards.
Patricia Bello of B&E Vineyards is a perfect example of the creative
spirit that epitomized the women of the vine.
Patricia did not come to her calling in the usual fashion. She and
her husband, Jerry began by planting grapes and selling them to
local vintners. Patricia, a cutting horse trainer and breeder left the
farming duties to Jerry. The vineyards provided her with a
marvelous view from her hilltop home and she came to love their
brilliant displays in the fall and spring, but winemaking was not
something she even considered. Along the way though, she devel-
oped an expensive habit. “I love a good bottle of wine but unfortu-
nately I seem to particularly like the ones that cost a hundred
dollars or more. That’s why I had to start making my own! My goal
was to produce a really great wine that was also affordable.”
With the assistance of other local winemakers, Patricia honed
her craft and became a truly exceptional winemaker, overseeing the
production of nearly 4000 cases of Cabernet Sauvignon, Merlot,
Syrah and a red blend called Red Rhythm. Her insistence on a
twenty month aging in French oak barrels produces a rich, velvety
wine that has helped her meet her goal of a creating fine wines that
will fit into almost anyone’s budget. This year her 2004 Cabernet
took the gold at the Paso Robles County Fair and her Syrah and Red
Rhythm both won gold medals at the San Francisco Chronicle’s
Wine Competition.
B&E Vineyards is located on Creston Road in Paso Robles. A
drive out to their tasting room will not only provide one with the
opportunity to enjoy fabulous wines, but a chance to take in the
awe-inspiring view of rolling vineyards that Patricia so loves. On the
top of the highest hill on the property, the Bello’s have built a
charming western style saloon in which visitors can relax, sip three
different reds (a Rosé is in the works) and be entertained by the
warmth and wit of the winemaker herself.
B&E Vineyards is open Friday through Sunday from 11 a.m. to
5 p.m. and on weekdays by appointment.

Tolosa Blends Fine Wine, Fine Art to Benefit Local Schools

Tolosa Winery has commis-
sioned six local artists to partici-
pate in their inaugural fund-
raising event, Barrels R Art. “Our
mission is to provide a platform
for local artists to apply their
talent and showcase their
creative synergies to another
great art form: the creation of
wine,” said Bob Schiebelhut

was given a 60 gallon barrel to
transform into their unique work
of art. Each barrel will be a one
of a kind original.

in the Tolosa Tasting Room

will be a gala dinner auction held

Stork as Master of Ceremonies.

Santa Maria – The Hidden Jewel of Santa Barbara

Over the years the landscape of the Santa Maria Valley has steadily
evolved and, unbeknownst to many, offers one of the most unique
Wine Country experiences on the Central Coast. While traveling

Learn About Sushi and Wine at Riverbench Winery
Contrary to popular belief, sushi goes with more than just sake.
Join Riverbench Winery as they explore some innovative combina-
tions of Riverbench wines with sushi rolls and sashimi creations by
Chef Jeff Fujiwara, Saturday, July 26, from 1 to 4 p.m. Limited open-
ings, so make reservations. The event is $20 for Benchmark Club
members. not-yet-members are $25.
Riverbench Vineyard was established in 1973, when its first
Chardonnay and Pinot Noir grapes were planted on the property. For
years since then, some of the most renowned wineries in Santa
Barbara County have purchased the fruit for their own wines. Over
time Riverbench has become a prominent name for high-quality
Chardonnay and Pinot Noir in the Santa Maria Valley.
In 2004, a group of local families purchased the property. Wine
drinkers themselves, the owners quickly became enamored with the
wine industry and decided to start producing their own wine label
using small quantities of their exceptional fruit. Riverbench Winery
was born.
The first vintage included both Estate and Reserve versions of
Chardonnay and Pinot Noir. Since then, their portfolio has increased
to include new interpretations of these noble varietals. All Riverbench
