The Apple Merlot has, of course, a different character. “It doesn’t
have the crispness that the Chardonnay has. It’s got more of a red
apple crispness to it,” says Osborne. “It’s like a braeburn rather than
a granny smith. The Merlot is a lot more structured than the
Chardonnay and you still get those nice cherry flavors coming
through, too.”
While the Apple Chardonnay sees minimal to no oak, the Merlot
sees only a little bit as well.
It’s not just novelty wines at Kelsey, though. Osborne is busy
creating a Central Coast cult wine in Kelsey See Canyon’s Estate
Pinot Noir. The Kelsey’s grow a small block of Pinot on their prop-
erty and last year, it yielded only two barrels. Out of that, 600 bottles
were produced which will go mostly to wine club members.
The Kelsey property borders the Salisbury Vineyards in See
Canyon and Osborne works with John Salisbury frequently,
purchasing fruit from the vineyard and consulting in their wine-
making as well. Fine Wine...
Osborne is not content to let sleeping dogs lie, either. His
craftsman style of winemaking bucks a lot of the old trends and he

produces. “Pinot Noir is delicate, so why put it in oak for so long?

the wine,” he says.
In that same spirit, Osborne has created Kelsey’s Platinum Pinot
Noir. “It’s essentially a white Pinot,” he says. “We get the fruit in early
while it’s still cool and we press it immediately; no crushing or
destemming, just pressing very gently. We get that juice off as fast as
we can and there’s an absence of color – none really at all.” The Pinot
Noir for the Platinum series comes from the Salisbury Vineyard.
“We’ve been really happy with the fruit there.” Using methods he
learned in France and at Schramsberg and Maison-Deutz for
sparkling wine, the Platinum Pinot is handled using Methode
Champenoise press cycle in order to get the juice as fresh as
possible. “As soon as we start seeing color in the juice, we press it
off and stop.”
Kelsey See Canyon also produces Cabernet Sauvignon and
Merlot from vineyards in Paso Robles owned by Richard Kelsey,
Dick and Dolores’s son. There’s also a beautiful Paso Robles
Zinfandel.
Rounding out the Kelsey collection with unique Ports, one made
from Pinot Noir called Esprit de Pinot, and another made from
Zinfandel, Osborne has helped Kelsey See Canyon create bold and
new wines in using old world techniques. “The Esprit de Pinot is a
pink Port and it’s pretty unusual,” he adds.
Perhaps it’s the ocean influence or maybe the cooler tempera-
tures, at times more than 40 degrees cooler than the Paso Robles
wine region to the north. Whatever it is, Kelsey See Canyon has
taken advantage of it. “Goût du Sel - The smell of the ocean salt in
the air.”

Minassian-Young Welcomes
Harvest & Celebrates its
Newly Remodeled Tasting Room
In 2004, Minassian-Young Vineyards opened its doors to the
public and now, four years later, the winery has a new look. The focus
of the renovation is to allow guests to fully appreciate the beautiful
settings, sense of place and inner workings of the winery.
On the south side of the tasting room, three double French doors
overlook estate vines and the walnut orchard surrounded by the Santa
Lucia Mountains.
Framing the tasting room is a new pergola and patio. A seven-foot
window on the north side gives guests a glimpse of the working cellar.
Keeping sustainability in mind, this remodel was completed with
minimal impact by recycling all lumber, doors and windowpanes to

solar tubes, energy efficient appliances, tankless water heaters and
water-efficient toilettes have been installed. In the near future, solar
panels will help offset its energy usage.
Completion of the remodel is planned for early October. To cele-
