INDUSTRIAL VISIT OBSERVATION SHEET

Profile of the organization ASIANA hotel is a business class luxury hotel which has a total of 114 rooms,3 banquet halls,3 restaurtants and a bar.

2. Infrastructure and Layout

The hotel has a an atrium style of layout and a double slab structure for the rooms.

3. Departments Organisation chart & operations a. Kitchen (Central kitchen, Banquet kitchen, Pantry, Cold kitchen)

Separate kitchens are there for all the restaurants under a chief cook. There is also a cold storage(Deep freezers) for storing all the vegetables and the meat.

b. Food and Beverage (Restaurant, Coffee shop, Bar)

The hotel has 3 restaurants named Silk,Caramel and Wildfire.Silk is the Thai restaurtant whereas the wildfire is the speciality restaurant. I lounge is the bar where music is played by a phiippines band on special occasions.

c. Front Office (Front desk, Back office, Reservation, Cashier, Bell Desk, Lobby)

Guests are received at the front office and there is a back office where the employees should sign in before getting in to the hotel. There are 3 staff members in the reservation counter, one staff at the cashier and 2 staff at the lobby to receive the guests.

d. Housekeeping (Types of guest rooms, Public areas, Laundry and Linen)

The hotel has 114 rooms in total and are kept neat and ready to deliver.there are separate chutes in each floor to take the used linen directly to the laundry where they are cleaned and sent back. There are 61 standard rooms, 33 Deluxe rooms, 1 studio room 3 suites, 3 junior suites and 1 Asiana suite

e. Maintenance (Procedures)

Room maintanenence done by the housekeeping department and there are chutes to take the used linen directly to the laundry.

f. Security (Procedures) CCTV cameras, undervehicle mirror checking,car scanner,fire extinguishers,Sprinklers,Smoke detectors are the sources for security in the hotel.

4. Sessions

The first session was given by Mr Shankar who is the Trainee manager of the hotel. He gave a brief description about the hotel and about the infrastructure and layout. He also gave a brief about the restaurants and the specialities of the each restaurant. Post noon session was given by Ms. Rajeshwari who gave us an insight about the housekeeping and what are the dos and donts of the department and how the department works. A brief session about sales was taken by Ms.Bosky who is the Sales manager of the hotel.She described about the strategies and measures taken by the hotel in getting clients and the steps that makes them different from the other hotels of the same class. The final session was taken by the director of the HR department who gave us a deep insight about the hotel industry and how the experience in the field can make you achieve great heights.
