Potassium citrate m ay be used as a partial or com plete replacem ent for sod ium citrate w hen red uced sodium or sod ium free prod ucts are d esired. Fed eral Stand ard s of Id entity for processed cheese allow the use of potassium citrate as an em ulsifying salt. The substitution of potassium salt for sod ium citrate w ill red uce the sod ium content by 720 m g per 100 g prod uct at 3% salt level. Potassium citrate w ill red uce sod ium content in beverages, gelatin d esserts, confections, jam s and jellies. Potassium citrate m ay also be used as a source of potassium ion either as a nutritional supplem ent or to m axim ize gelation of kappa-carrageenan gels in applications such as surim i analogues. Storage below 75F and 55% relative hum id ity in tightly sealed container is recom m end ed . H ow ever, it is recom m end ed to use the product w ithin three years. Potassium citrate read ily d eliquesces in m oist air. Ad herence to the above storage cond itions is highly recom m end ed . Inspect prod uct after six m onths of storage. Other than possible caking or altered w ater content, no effect of prod uct is anticip ated from longer storage period s. It is suggested that all prod ucts be used on a First -In First-Out basis.
