About The Red Robin Kids Cook-Off Cookbook

Foreword by Eric Houseman, President and COO, Red Robin International, Inc.
We hope you enjoy the gourmet burger recipes included in the Red Robin Kids Cook-Off Cookbook. These recipes were created by kids from across the country who submitted their own unique recipes to Red Robins Kids Cook-Off Contest. One of the best things about the cookbook is it also includes important backto-school safety tips from the National Center for Missing & Exploited Children (NCMEC). There is no better time to talk about back-to-school safety with kids than while doing something fun, like cooking. Congratulations to this years grand prize winning gourmet burger maker, 7-year-old Charlie Beckett from Rathdrum, Idaho, who invented The Holy-Peo Burger. His recipe is just one of 50 gourmet burger recipes included in this cookbook that you can make at home. Make sure you visit any of our participating U.S. Red Robin restaurants from July 28 through September 13, 2009 to order Charlies grand prize winning gourmet burger. Each time you order The Holy-Peo Burger, Red Robin will donate 50 cents to NCMEC. Many thanks to all of the kid chefs who submitted their own avorful and innovative gourmet burger recipes to the contest! We hope you enjoy making these creative gourmet burgers at home.

The Red Robin Story

Where can you get a burger topped with grilled pineapple rings, chili, guacamole, onion straws or even a fried egg? At Red Robin restaurants where were famous for Gourmet Burgers! And believe it or not, these Gourmet Burgers have taught us a lot about who we are as a company always use the freshest, highestquality Honest to Goodness ingredients, take pride in what youre creating, be innovative and have fun! The Red Robin legacy began in the 1940s with Sams Tavern, a small tavern perched on a Seattle hilltop near the University of Washington campus. The owner, Sam, sang in a barber shop quartet and could frequently be heard singing the song, When the red, red robin goes bob bob bobbin along. In fact, Sam loved the song so much that he eventually changed the name of his tavern to Sams Red Robin, and over the years it became known simply as the Red Robin restaurant. Today, Red Robin Gourmet Burgers, Inc. is a publicly-traded, casual dining restaurant chain. We offer our Guests more than two dozen Gourmet Burgers in a variety of craveable combinations with all-you-can-eat Bottomless Steak Fries. Our menu also includes salads, soups, appetizers, entrees, desserts, childrens fare and our signature Mad Mixology specialty beverages.

Foreword by Ernie Allen, President and CEO, National Center for Missing & Exploited Children (NCMEC)
In 25 years of operation, we at the National Center for Missing & Exploited Children (NCMEC) have seen great progress in child safety. Still, we know there is more that can be accomplished through a shared commitment to safety education. That is why we are grateful to once again take part in the Red Robin Kids' Cook-Off. We know that child safety can sometimes be a difcult topic for families because it seems frightening, but everyday situations make the best moments for those conversations. One of the most convenient is each year when we send our children back to school. This year, we worked with Red Robin to ll this cookbook with useful tips and ideas for back-to-school safety in addition to the great burger recipes. The beginning of a new school year can be a really exciting time for families as their children leave home for new schools, teachers, and friends, sometimes for the rst time. But it also means children may nd themselves more at risk. NCMEC found that 41% of attempted abductions happened on the way to and from school. With this in mind, we have lled this book with small, but important ways to help build childrens condence and teach them safer ways to recognize and avoid potentially dangerous situations. We hope you will use the resources in this book to instill in yourselves and your children the necessary skills to be safer as they start back to school and all year long. So, please enjoy cooking these delicious burgers with your family and remember its sometimes easier to talk about something serious while doing something fun.

About the NetSmartz Workshop

The NetSmartz Workshop, a program of the National Center for Missing & Exploited Children, is an interactive, educational safety resource for children ages 5 to 17, parents, guardians, educators, and law enforcement, that uses age-appropriate activities to teach children how to stay safer on the Internet and in the real world.

Real-World Safety with the NetSmartz Workshop

Back-to-school is an exciting time for many families. But while children are busy thinking about friends, new classes, and new challenges, parents and guardians have an additional concern: their childrens safety. Helping parents and guardians address these concerns is an integral part of the work done by the National Center for Missing & Exploited Children (NCMEC). Through education programs, like the NetSmartz Workshop, parents and guardians have access to the materials they need to help keep their kids safer. Both NetSmartz and NCMEC strongly believe that preparation and family communication are a key part of keeping kids safer; our goal is to have you use the following tips to help empower your children. Be on the lookout for teachable moments year-round to help you communicate with them about personal safety. When you talk to your children and help them practice safer responses, you help prepare them to act quickly and wisely should a potentially dangerous situation arise. BEFORE THE FIRST DAY OF SCHOOL 1. Check to see if you have a current photo of your child. Plan to update that photo every six months. 2. Make sure that your childs le at school contains the most recent emergency contact information. Also, notify the school ofce about who is authorized to pick your child up from school. 3. Find out about the schools online policy and make sure they dont post personally identifying information such as your childs name, address and photo on the schools website. 4. Help your child memorize your telephone number and the telephone numbers of other trusted adults. 5. Write your childs name on the inside of backpacks where its hidden from view. Someone addressing your child by name may trick them into thinking they know that person. 6. Make sure your child knows how to identify other trusted adults in case youre not available during an emergency, such as uniformed law enforcement ofcers, crossing guards and parents with children. 7. Take your child on a dry-run of the trip to school, pointing out places where they may go for help in case of an emergency. 8. Practice what-if scenarios with your child in which they are offered rides or approached by unknown people. 9. Review the NetSmartz Real-World Safety Pledge at www.NetSmartz.org with your child.

Real-World Safety with the NetSmartz Workshop (cont'd)

GOING TO AND FROM SCHOOL 1. If your child walks or bikes to school, make sure that he or she goes with a group. Know the names and telephone numbers of the children in that group and their parents or guardians. If your child waits for a bus, wait with him or her at the bus stop. 2. While waiting for the bus, children should not wander away from the bus stop or play in the street. Help your child pick a spot to wait that is in plain view of the bus driver. 3. Talk to your child about the importance of paying attention to his or her surroundings and obeying trafc signals. 4. Advise your child not to take short-cuts. 5. Adults needing help should not ask children; they should ask other adults. If an adult approaches your child for help or directions, teach him or her to immediately get away from that person and tell you or another trusted adult. 6. Teach your child not to accept gifts or rides from people he or she does not know. If someone offers to show him or her something in a car, teach your child to say No and move away as quickly as possible. 7. Instruct your child not to leave school grounds without getting your permission and checking with the school ofce rst. 8. Know your childs after school plans. Make sure that your child knows to notify you before changing plans. 9. Communicate with your child on a regular basis about his or her trips to and from school. Ask if he or she has seen anything or anyone suspicious, and encourage your child to tell you about anything that makes him or her feel uncomfortable right away. HOME ALONE 1. Remind your child to never open the door when he or she is home alone. 2. Tell your child not to let anyone, other than a trusted adult, know that he or she is home alone. 3. Remind your child not to ask anyone over when he or she is home alone. 4. Keep a list of emergency telephone numbers by the telephone and instruct your child who to contact for help.

Ten Tips for Cooking with Your Kids

At Red Robin, we are all about families and fun. Through this cookbook, we encourage parents and guardians to spend quality time with their kids cooking together in the kitchen. Below, we have included some helpful Red Robin tips on ways parents and kids can have fun together while staying safer in the kitchen.

1. Explain kitchen safety to your child before starting any cooking project. Its important that every child knows the dos and donts of cooking and kitchen manners. 2. Wash your hands with warm water and soap before starting any cooking project. 3. Prepare recipes that are kid-friendly. There are many cookbooks available, including this one, with familyfriendly recipes that your child will be excited to makeand eat! 4. Give your child his or her own apron and plastic youth-sized cooking utensils. 5. Explain each step in the recipe to your child as you cook so he or she learns what it takes to make a great meal. 6. Allow your child to pour ingredients into the bowl or stir the contents so he or she is involved in the cooking process. 7. Only allow your child to participate in things that will not harm him or her. Do not allow your child to use knives or glass utensils, and make sure he or she does not touch a hot stove, cook top or pot. 8. Give your child praise while you cook together. 9. Expect some spills! Cooking is fun, but it can be messy! 10. Involve your child in the set-up, cooking and clean-up process. Although cooking is fun, it is important to clean up afterwards, too.

Tips for Making a Gourmet Burger

MAKE YOUR BASIC BURGER INTO A GOURMET BURGER: Its important to use fresh ingredients when youre building your Gourmet Burger try making a homemade sauce or spread, or enhance a store bought condiment, sauce or salsa by adding your own fresh ingredients. For the best avor use fresh, never-frozen ground beef. Not in the mood for beef? Use pork, chicken, vegetarian or seafood options instead. Have fun with your Gourmet Burger toppings! Enhance the avor of your burger by using gourmet ingredients such as unique cheeses, breads, spreads, fruit or vegetables that wouldnt traditionally top a burger. Combine sweet and salty or spicy avor proles to enhance the taste and craveability of burgers such as combining pineapple and teriyaki sauce or jalapeos and a cool avocado spread. Instead of a traditional sesame or poppy seed bun, use artisan bread to bring out the avor and texture of the burger. Take the avors from other foods you love, such as basil, balsamic vinegar and garlic, and integrate them into your Gourmet Burgers at home.

STAY SAFER WHILE GRILLING USING THESE SAFETY TIPS: Cook food thoroughly; The U.S. Food and Drug Administration recommends beef burgers be cooked to an internal temperature of 160 F, chicken burgers be cooked to 165 F and pork burgers be cooked to 155 F. The U.S. Food and Drug Administration advises to keep hot food hot, above 140 degrees, and cold food cold, below 40 degrees. Wash your hands frequently using hot water and soap, especially after handling raw meat. Keep raw meat separate from cooked meat and other burger toppings to avoid cross contamination. Use different platters and utensils when handling raw meat and cooked meat to avoid cross contamination. Make sure there is a clean platter and utensils to serve the food. Refrigerate any leftovers promptly. If ever in doubt, throw food out! Position the grill away from siding, deck railings and out from under eaves and overhanging branches. Never leave the grill unattended. Keep children and pets away from the grilling area by declaring a three-foot safe zone around the grill. Keep it clean; make sure there are plenty of clean utensils and platters to use before, during and after making your Gourmet Burger, and make sure to wipe down counters and surfaces with disinfectant as you cook. As an extra precaution, be sure to have a re extinguisher nearby and make sure you are familiar with how to properly use it.

The B.A.T. Burger (Bacon, Apple, Turkey)
INGREDIENTS:
1 ground turkey patty 1 burger bun 2 slices of bacon 3 thin slices of gala apple 1 slice of provolone cheese Honey mustard 2 slices of tomato (optional) Lettuce (optional)

BUILD:
First, lets prepare our ingredients. Cut your gala apple into 1/16 - 1/8 inch slices. Be sure not to cut into the core. Place your turkey patties on the grill about 300-350 degrees for 5-6 minutes on each side. While the burgers cook, prepare enough bacon so that each burger will have two slices. On the last minute of cooking, lay 2-3 slices of your gala apple on each patty, then 1 slice of provolone cheese. After that, you take the top of the burger buns and spread enough honey mustard to cover the whole top. Now lets stack our burger. First put the patties on each bun. Then goes two slices of bacon, and last but not least, the burger tops. You may add lettuce and tomato if you like, but most of my tasters preferred the burger without it. Lets just serve it on the side. Then it is ready to serve.

Emilio Fuentes
Age 10 Santa Barbara, California Why my Gourmet Burger deserves to be served at every participating U.S. Red Robin restaurant: Because most Californians love Santa Maria style tri-tip and a lot of other places have never heard of tri-tip and this burger sounds very delicious.

Grill hamburger patty and season both sides with season salt. While burger is cooking, melt 10 oz. Velveeta with a can of Rotel and set aside. Mix remaining 6 oz. of Velveeta with refried beans until well-blended. Cut ciabatta bun in half and spread bean mixture on both sides. Layer lettuce and tomato on bottom half of bun. Lay hamburger patty on lettuce. Sprinkle top of patty with about 1/4 cup of corn chips. Drizzle cheese mixture on top of corn chips and top the burger off with the top part of the bun. Use remaining dips for French fry dipping or carrot dipping. Makes about 4-6 burgers.

Chipotle Cordon Bleu

INGREDIENTS:
1 lb. ground chicken 1/8 tsp. ground cumin 1/4 tsp. chili powder 1 egg Sliced pepper-jack cheese 2 tsp. chipotle raspberry sauce 1/4 tsp. paprika 5 Tbsp. breadcrumbs Shaved Virginia ham Wheat buns Butter

Mix ground beef, almost all the salsa in a jar, garlic powder, pepper, salt and form into burger patties. Pan fry in olive oil, the onion, peppers and slice of tomato. Take off heat and let stand while cooking burgers to taste. I like them med/rare. My mom buys me, or sometimes we make our own, cheesy garlic bread (using shredded cheddar). Can be served with extra hot sauce for people who like it spicier and some like it with pepper-jack cheese, too.

BUILD:
1. Combine ground chicken, chipotle raspberry sauce, ground cumin, paprika, chili powder, breadcrumbs and egg. Mix thoroughly. 2. Divide into four equal parts and form into patties. 3. Place on grill and cook for four minutes on each side. 4. Add ham and cheese on top of burger. Cook until cheese is melted. 5. Lightly butter the buns and toast on the grill. 6. Place patty on bun and serve.

The Muenster Burger

INGREDIENTS:
1 to 1 1/2 lbs. ground lean turkey 1/2 pkg. dry Knorr Cream of Spinach Soup Mix 1/4 cup water Baby spinach leaves, rinsed 1 pkg. sliced mushrooms 2 smallish sweet onions, sliced 1 lg. yellow/orange tomato, cut into 4 slices 4 thick bun-size slices of muenster cheese Whole wheat buns or whole wheat pita pockets (Butter for sauting the onions and mushrooms)

BUILD:
Put the lean ground turkey in a bowl. Add the soup mix and water. Mix it all up thoroughly. (I did this with my clean hands!) Then, make four burger patties and cook on grill or in a skillet. In a skillet with butter, add the mushrooms and onions and cook until tender. If you are using pita pockets, then you can heat the muenster cheese and the spinach leaves (at least 4! But load them up!) in the pockets in the oven. If you are using whole wheat buns, then just add the muenster cheese to the burgers at the end of the cooking time so it melts. To build the burger, put it on the bun or in the pita pocket and then add a big spoonful of the onions and mushroom mix with baby spinach leaves. In the summer, use a slice of yellow/orange tomato to add color and great taste! If you cant nd these, then go for a red tomato. Each individual can add the condiments they like. This recipe makes four delicious burgers.

BUILD:
Chop cilantro and mix with mayonnaise. Combine 1/2 Tbsp. ketchup with 1/2 Tbsp. chili sauce. Fry jalapeo popper and split lengthwise. Grill hamburger. Put cilantro mayonnaise on top of bean shaped bun, and spicy ketchup on bottom of bun. Place grilled onions on bottom of bun. Place burger on top of the onions. Place jalapeo popper with cream cheese facing the burger. Layer on bacon. Top the burger with top bun.

Brendan Heap
Age 10 Los Gatos, California Why my Gourmet Burger deserves to be served at every participating U.S. Red Robin restaurant: I think it should be served at Red Robin because its small enough for kids to eat or as an appetizer. It holds together well and has a lot of avor. It is not too sweet or too spicy. All of the avor is inside the meat, which keeps it moist and you dont have to add a lot of stuff to it. Kids would like to have more choices besides just a small burger or cheeseburger, and I think this would be the perfect choice.

Sophia Haroian
Age 7 Boise, Idaho Why my Gourmet Burger deserves to be served at every participating U.S. Red Robin restaurant: I want my burger for Red Robin because its kind of spicy. And its very juicy. And I just want it to be on the menu.

Caressa Morris
Age 11 Portland, Oregon Why my Gourmet Burger deserves to be served at every participating U.S. Red Robin restaurant: My Gourmet Burger deserves to be served at Red Robin, because this burger gives everyone a avor of a little bit of everything. Because this is an allAmerican burger and has so many avors going off of each other. I think that is why my Wild Western Burger deserves to be served in Red Robin!

Zachary Hayes
Age 11 Missouri City, Texas Why my Gourmet Burger deserves to be served at every participating U.S. Red Robin restaurant: It is common sense that not everybody lives in Chicago and some people cant afford to vacation there, but after you take a bite you will feel like you are in the Windy City. Of course a vacation would be a better experience of Chicago, but if the Windy City Burger is the best you can do, its enough to be called an experience.
