HIGH FRUCTOSE CORN SYRUP

The chemical process used to transform High Fructose corn syrup from regular corn syrup makes it the equivalent by weight in sweetness to table sugar. The extra sugars added to it reacts in your body differently. Normally to break down sugars your body produces an enzyme making the sugars digestible. HFCS does not require the production of this enzyme. The result is an abnormally fast and high spike in blood sugar. This spike is a contributing factor in diabetes.
The Princeton researchers had been studying not only side effects of high fructose corn syrup, but how your body reacts when it's ingested. They discovered that rats which had access to high fructose corn syrup gained significantly more weight than those with access to basic table sugar, even when their overall caloric intake was the same. They did two studies and here are a few excerpts from their findings: The first experiment male rats given water sweetened with highfructose corn syrup in addition to a standard diet of rat chow gained much more weight than male rats that received water sweetened with table sugar, or sucrose, in conjunction with the standard diet. The concentration of sugar in the sucrose solution was the same as is found in some commercial soft drinks, while the high-fructose corn syrup solution was half as concentrated as most sodas. The second experiment the first long-term study of the effects of high-fructose corn syrup consumption on obesity in lab animals monitored weight gain, body fat and triglyceride levels in rats with access to high-fructose corn syrup over a period of six months. Compared to animals eating only rat chow, rats on a diet rich in highfructose corn syrup showed characteristic signs of a dangerous condition known in humans as the metabolic syndrome, including abnormal weight gain, significant increases in circulating triglycerides and augmented fat deposition, especially visceral fat around the belly. Male rats in particular ballooned in size: Animals with access to high-

fructose corn syrup gained 48 percent more weight than those eating a normal diet. In humans, this would be equivalent to a 200-pound man gaining 96 pounds.

There's even more. Recent research by Forrest Nielsen, Ph.D., of the USDA's Human Nutrition Research Center in Grand Forks, N.D., found that fructose interferes with absorption of copper, an essential mineral needed to create hemoglobin in red blood cells. "Copper is affected by fructose," Nielsen told Natural Health. "With a high intake of high-fructose corn syrup, people might show signs of a copper deficiency and may need to enhance their copper intake." In addition, when five volunteers ate a diet with 20 percent fructose, their total cholesterol and LDL cholesterol shot up. But the combination of suppressed copper and high fructose also increased the number of free radicals, damaged molecules that contribute to cancer and aging. In fact, a trail of medical studies dating back a quarter of a century doesn't paint a terribly sweet picture for fructose. High fructose consumption has been fingered as a causative factor in heart disease. It raises blood levels of cholesterol and another type of fat, triglyceride. It makes blood cells more prone to clotting, and it may also accelerate the aging process. "People should avoid it," urged John Yudkin, M.D., Ph.D., professor emeritus at Queen Elizabeth College, London, and an expert in the health effects of sugar.
