watermelon & arugula salad

Its all the rage in restaurants now to make salads with watermelon and feta.
I have to admit that it leaves me coldI dont find that watermelon or feta
each make the other taste better. However, when I started playing around with
watermelon, arugula, and freshly squeezed lemon juice, I found that the peppery
greens and the acidic lemon make the sweet watermelon taste more interesting.
This is a refreshing summer salad.

pound baby arugula leaves


2 pounds seedless watermelon, -inch-diced
(3 pounds with the rind)
cup good olive oil
cup freshly squeezed lemon juice (2 lemons)
1 teaspoon kosher salt
teaspoon freshly ground black pepper
-pound chunk Parmesan cheese

Place the arugula and watermelon in a large bowl. In a small bowl,


whisk together the olive oil, lemon juice, salt, and pepper. Pour
enough dressing on the arugula to moisten. Toss well and place on
6 salad plates.
With a very sharp knife or a vegetable peeler, shave the Parmesan
into large shards and sprinkle them on the arugula and watermelon.
Sprinkle with salt and serve.
