Food
Rich Rajasthani culture reflects in the tradition of hospitality. geography has resulted in a rich cuisine involving both vegetarian and non vegetarian dishes. Rajasthani food is characterized by the use of: 1) Jowar, 2) Bajri, 3) legumes and lentils
Its distinct aroma and flavor achieved by the blending of spices including: Curry leaves, tamarind, coriander, ginger, garlic, chili, pepper, cinnamon, cloves, cardamom, cumin, and rosewater.
Majority of Hindu and Jain Rajasthanis are vegetarian. Rajputs are usually meat eaters. Eating beef is and was a taboo. Most famous dish is Dal-Baati-Churma.
It is also known for its snacks like Bikaneri Bhujia, Mirchi Bada and Pyaaj Kachori. Other famous dishes include Bajre ki roti (millet bread) and Lashun ki chutney (hot garlic paste).

Beverages
People of the region drink a great deal of tea which is known as chai in the region. Black & Green tea are the most popular teas in this region. One of the most common beverages is the cool Almond beverage. Rajasthanis also have abundant fresh fruit juices.
Rajasthani Snacks
Rajasthani cuisine is centered on brown beans and rice. Most of the Rajasthanis won't eat spicy foods. Most of the Rajasthani snacks are made from dried fruits and some from fresh fruits. These snacks are quite unique in nature. Some of the snacks are filled with meat and vegetables.

There are many delicious desserts in the cuisine of Rajasthan. A few of the popular ones are:

Agriculture
Rajasthan's economy is mainly agriculture-based. Bajra, juar, wheat and barley cover the largest cultivated area.
Bajra(Pennisetum typhoideum) is consumed by the rural poor, particularly the nomads. Rajasthan is the largest producer of bajra in India. Juar(Sorghum vulgare) is an important pulse crop during the monsoon. Gram(Cicer arietinum) (right) is another major pulse crop grown in rabi.
Wheat(Triticum sp.) is cultivated on irrigated land. Barley(Hordeum vulgare) is the second largest crop in Rajasthan. Maize(Zea mays) is a stable crop for the Bhil tribes in the Aravallis. Groundnut is a major kharif oilseed crop. Sesame Rajasthan provides the second highest quantum of sesame (Sesamum indicum) in India. Cotton(Gossypium sp.) used to make the famous Rajasthani textiles, is a major cash crop.
