Nata de coco making

Acetobacter xylinum
Cellulose forming bacteria form a
delicacy called nata. Nata making
plays an important role in the
development of our coconut industry.
It can be prepared from various fruits
like banana, pineapple, siniguelas,
tomato, papaya, mango at coconut.

In the preparation of Nata, the presence of the right percentage of


sugar and a definite acidity is importantand also the addition of
proper nutrients like ammonium sulfate, ureaand ammonium
phosphate.
Fermentation takes place during the preparation.

Cultural requirements
for the formation of
nata
Nutrient medium, preferably one containing an
ingredient with growth promoting factors such as those
present in coconut water.
Temperature about 28c
pH 5-5.5
Nitrogen source to have favorable pH for the fermenting
organisms

Nata making
Needs:
Acetobacter xylinum
6 cups coconut water
cup sugar
Glacial acetic acid
Nata starter
ammonium sulfate

Procedure
Measure 6 cups of coconut water, 1/2cup sugar and 1
tbsp. glacial acetic acud.
Strain coconut water using cheesecloth, add the sugar &
the acetic acid. Boil for 10 mins and let cool. Add the
nata starter and distribute to the containers. Add a pinch
of ammonium sulfate for more rapid growth of the nata.
Cover the containers with paper and set aside for 2
weeks.
Harvest nata when theyre about an inch thick.
Wash it thoroughly and cut into cubes.
Immerse in water and change the water often to remove
the sour odor. Boil it for several times until sour taste
and odor is gone.
Drain, weigh. Add sugar and stir thoroughly.

Another advantage of nata de coco is
a fiber (dietary fiber), it is quite high,
especially cellulose.
Without fiber in the diet, we would
easily have symptoms of constipation
or constipation, diverticulosis disease,
colon cancer, inflammation of the

10-14% alcohol and is taken in with food
(b)dessert wine 19-21% alcohol (c)sparkling
wine contains carbon dioxide and is
characterized by its effervescent property.

Procedure

Wash fruits.
Peel bananas and slice thinly.
Boil until the fruits are cooked.
Cool and strain.
To the extract add sugar.
Stir and boil to dissolve the sugar.
Cool and place in a narrow mouthed countainer.

Cassia fistula

Procedure
Wash the collected plant thoroughly with water.
Chop the plant parts into pieces.
Add one glass of cooking oil with one glass of chopped
plant.
Cooked the chopped plant until crisp.
Chop 2 white candles and pour the oil mixture into a
clean pot.
Add in chopped candle, allow to boil with constant
stirring until candles melts.
Turn off heat and let the mixture cool down.
Pour in clean containers and label.
