INTRODUCTION

Lycopene from latin word


lycopersicum is a carotenoid
which is found in plants and
that imparts red pigment to
the fruits and vegetables like
tomato carrot papaya..etc.
The pigment was first
discovered by a
french botanist
pierre Marie Alexis in 1876 in
the tomato fruit.
It is a polyunsaturated
hydrocarbon
containing 11 conjugated and

Physical and chemical properties:it is a tetaterpene,


it is polyene chain consisting of alternative
double and single bond,
it is susceptible to oxidative degradation ,
it is found both in cis and trans forms, it is
insoluble in water but soluble in organic solvents.
Biochemical properties:lycopene shows potent antioxidant activity,
it is a singlet oxygen quencher among
carotenoids.

APPLICATIONS OF LYCOPENE

Antioxidant activity of lycopene the lycopene


encounters the ROS like singlet oxygen and
transfer energy between these mlecoules .
The excess production of ROS leads to diseases
such as cancer, diabetes, etc .
Mode of action on Canadida albicans- candidiasis
is a fungal infection that causes by any species
from genus candida c. albicans is a common
agent found in pathogensis of candidias in
humans. It causes oral and genital infections in
humans.

Lycopene as an alternative coloring agentThere are wide variety of coloring agent like
nitrites, monosodium glutamate but they exhibit
side effects , lycopene due to its strong color and
non toxicity it can be used as food coloring agent
and also as preservative.
Lycopene as antifungal agentThe antifungal effects of lycopene against
candida albicans in the human body were
studied by carrying out in vitro tests.

Extract preparation- it is extracted using the


organic solvents, either by blending,
homogenizing, or using pestle and mortar.
Apart from this other extraction methods like
enzymatic pre treatment, surfactant assisted
method, etc are followed.
Quantification of lycopene the solvent extract
is either assessed by either HPLC, clomun
chromatography, thin layer chromatography, or
by measuring the absorbance using UV-visible
spectrophotometery.

LITERATURE REVIEW
Lycopene in management of cancer -prostate cancer is the second leading cause of
cancer death in American men and is the best
treated cancer by chemoprevention .
-strong anticancer activity even at advanced and
aggressive forms.
-greater intake of tomatoes and reduce risk of
prostate cancer.
-high consumption of carotenoids like betacarotene, alpha-carotene, lycopene reduces risk of
esophageal cancer.

Lycopene in combating cardiovascular diseases-hypercholesterolemia.

OBJECTIVE
To extract and estimate the amount of lycopene
from different samples .
To determine the antioxdant activity of the
extracted lycopene using potassium permanganet
and sulphuric acid method.
To check the antifungal activity of lycopene
against candida albicans.

MATERIAL AND METHODS

Materials
samples/chemicals collected:
Three varieties of tomatoes were selected from
local market of Hubli-Dharwad region.
Sample of papaya variety was collected from
university of agriculture and science, Dharwad.
Pure culture of Candida albicans was produced
from national chemistry laboratory pune.
Antibiotics were used as standards.

MethodsLycopene estimation:
preparation of extract
for lycopene
estimation.
Separation of organic
layer and aqueous
layer.
Lycopene estimation
using uv visible
spectrophotometer .

ANTIOXIDANT ASSAY

Potassium permanganate assay - The assay is


based on the redox reactions between the the
antioxidant sample and the otassium
permanganate in the sulphuric media that is
leading to the discolration of the potassium
permnganate.

DISCUSSION
Lycopene is the most efficient singlet oxygen
quencher .
Tomato and papaya being the most prominent
source of lycopene are easily available and also
economically more viable to incorporate in our
diet.
An attempt was made to evaluate the lycopene
content in tomatoes and papaya from hubli
dharwad region.
Lycopene showed antimicrobial and antifugal
activity

Locally available tomato and were named as


Rupali
Pusay ruby

Nmadhari-

Solo-

The studies showed that highest lycopene content


was observed in namadhari followed by rupali
and pusa ruby.
Solo variety of papaya had the least content of
lycopene.
Antioxidant activity of tomato and papaya was
estimated by potassium permanganate method.
Antimicrobial activity of lycopene .

CONCLUSION
Antioxidant property of lycopene.
This study was carried out to asses the
estimation of lycopen, antifungal and antioxidant
activity of lycopene.
Processed foods of tomato contain rich lycopene.
Antibiotics nature of lycopene showed it effect on
C .albicans.
