Drying of Solid Foods

Drying is a process of removal of relatively small amount of a


solvent (usually water) from a solid material to reduce the content
of residual liquid to acceptable level

Air at 60C and 8% RH is blown through a continuous
dryer from which it emerges at a temperature of 35C.

Time for air drying at constant rate


200 kg of material are dried from an initial water content of 80% on a wet basis and
with a surface area of 20m 2. It has been measured that to dry to 50% moisture content
on a wet basis, assuming constant-rate drying in air at a temperature of 55C dry bulb
and 25C wet bulb, mass transfer coefficient k=0.018kg/m2/s.
