Service Description
The Green Bean is a restaurant that gives customers a healthy alternative to
fast food. The Green Bean focuses on serving food without genetically
modified organisms, and uses all organic food.
Floor plan
Needs to be 60% dining and 40% kitchen, inventory, cash register, etc.

FIFO inventory method for daily operations
LIFO on the books
Count inventory every Monday, Wednesday, & Friday

Competitive Priorities
We are looking to establish our restaurant in Boston.
We decided to locate on Commonwealth Ave because there are a lot of
college students, who may want to work healthy food into their diets.
We will be competing with places such as Uburger, and Sunset Cantina, both
of these companies say that they are inexpensive
Because of the large amounts of college students in the area, having
competitive prices is very important

To be able to find this there are a series of steps that need to be found to
determine the economies of scale.
First all of the fixed costs needs to be found. This will allow the company to
find out their contribution margin. This is the margin allows them to
determine their break even point in cash along with units.
Second we need to figure out the discounts we will have when ordering more
product.
Expansion Strategies
Location- an area similar to the one we are in now, potentially a different city
that has colleges in it
Advertising- if we open another Green Bean in a different city we would
need to advertise so people know about us
Social media- Everyone is constantly on social media, if w have a Facebook,
twitter and a good website, it would help us expand the restaurant.

The Target Market is the Millennials
According to Aetena that the perception of being healthy to Millennials is
to have a good diet and exercise
They have the most capital to spend ( Their parents)

Equipment- stove, oven, fryer, microwave, cooler, freezer, food prep table,
sinks, shelving/storage.
Green Bean leases building per month.
Supply and Demand
Green Bean buys local produce twice a week and other food. Depending on
the demand statistics, it will be determined how much fresh food we will
have delivered.

Our organic and fresh food suppliers are certified by the National
Organic Program.
Organic certification is a certification process for producers of organic food and
other organic agricultural products.
We work with our suppliers who share our commitment to raising food in ways that
demonstrate respect for people, the environment and farm animals.

The typical size of a fast food restaurant is 1,400 to 4,000 square feet.
15 square feet per seat for the dining area which should be 60% of the floor
plan
Five square feet per seat is needed for the kitchen and preparation is 40%
This calculated to around 56 seats
