The Foodservice Industry
Provides millions of meals a day in a wide variety of types
of operations:
 Food can include a wide range of styles and cuisine types.

 By Country (British or Italian)

 By Type of Cuisine (Oriental, Asian or Western)

 By a particular specialty (Fish, Vegetarian or Health)

 Beverage include all alcoholic and non-alcoholic drinks.

 Alcoholic (Wines, cocktails, beers, spirits and liqueurs)

 Non-alcoholic (Water, juices, tea, coffee, and milk)

Within the foodservice industry, there are


number of sectors and these are categorized
according to the type of customer demand
being met.
The next slide shows a list of industry sectors
and identifies the prime purpose of the food
service operations within them.

1) Hotels and Other Tourist Accommodation
Purpose of the foodservice operation: Provision of food and
drink together with accommodation services.
Historical Purposes: Supported by developments in transport
and increases in business and leisure-related tourism.

2) Restaurants including conventional and specialist
Purpose of the foodservice operation: Provision of food and
drink, generally at a high price with high levels of service.
Historical Purposes: Grew out of hotel restaurant (which were
originally highly formal) through chefs wishing to start their
own business

3) Popular catering including cafés, pizza grills, specialist
coffee shops, roadside restaurants and steak houses.
Purpose of the foodservice operation: Provision of food and
drink, generally at low/medium price with limited levels of
service and often high customer throughput.
Historical Purposes: Most recently highly influenced by USA.

4) Fast foods
Purpose of the foodservice operation: Provision of food in
highly specialized environment, characterized by high
investment, high labour costs and customer throughput.
Historical Purposes: Combination of catering and takeaway,
influenced by USA concepts.

5) Takeaway
Purpose of the foodservice operation: Fast provision of food
and drink
Historical Purposes: Developed from a variety of concepts.
More recently, influenced by USA and trends in food tastes.

Purpose of the foodservice operation: Provision of food and
drink as an adjunct to retail provision.
Historical Purposes: Developed originally from prestigious
stores wishing to provide food and drink as part of the
retailing experience.

Purpose of the foodservice operation: Provision of large scale
of food and drink for events.
Historical Purposes: Originally associated with hotels but now
has become major sector in its own right.

Purpose of the foodservice operation: Provision of food and
drink to people engaged in another pursuit.
Historical Purposes: Increases in leisure have made profit from
food and drink attractive to leisure and amenity providers.

Purpose of the foodservice operation: Provision of food and
drink together with petrol and other retail services, often in
isolated locations.
Historical Purposes: Influenced by USA and became
specialised because of government regulations and locations.

Purpose of the foodservice operation: Provision of food and
drink to people at work.
Historical Purposes: Given substantial boosts during World
Wars. To preserve conditions of professional contract caterers

drink to people in colleges, universities, armed forces and
people through established social needs.

Purpose of the foodservice operation: Provision of food and
drink away from home base; suppliers usually associated
with a major event.

2) Restricted Market
 Captive – customers have no choice

 Semi-Captive – costumers have choice before entering,


but once choice, costumers will have a little choice of
food and drink than that on offer.
