Fractional crystallization of TAG
Oil can be considered as a solution of TAG in TAG:
• high melting TAG (e.g. PPP) are solute
• low melting TAG (e.g. OOO) are solvent
• similar TAG can intersolubilize
Consequences:
• No melting point, but melting range
