EXECUTIVE SUMMARY

Lumpia are various types of spring rolls commonly found in the Philippines and
Indonesia. Lumpia are made of thin paper-like or crepe-like pastry skin called "lumpia wrapper"
enveloping savory or sweet fillings. It is often served as an appetizer or snack, and might be
served deep fried or fresh (unfried). Lumpia are Filipino and Indonesian adaptations of the
Fujianese and Teochew popiah, which was created during the 17th century in the former Spanish
colonial era.

In the Philippines, lumpia is one of the most common dishes served in gatherings and
celebrations. In Indonesia lumpia has become a favorite snack and is known as a street hawker
food in the country.

In the Netherlands and Belgium, it is spelled loempia, the old Indonesian spelling, which
has also become the generic name for "spring roll" in Dutch. A variant is the Vietnamese lumpia,
wrapped in a thinner pastry, though still close in size to a spring roll, in which the wrapping
closes the ends off completely, which is typical for lumpia.

Lumpia was introduced to the Philippines during the pre-colonial period by early
Hokkien immigrants and traders from Fujian between 900 and 1565 AD. The name is derived
from Hokkien, a language that originated in southeastern China: "lun" means wet, moist, or soft,
and "pia" means cake or pastry. They have been thoroughly notarized to Philippine cuisine and
are found throughout the islands. They use various fillings inspired by local ingredients and
dishes, and the later cuisines of Spain, China, and the United States.

Filipino lumpia can be differentiated from other Asian spring roll versions in that they
use a paper-thin wrapper made from just flour, water, and salt. They were also traditionally
slender and long, with a shape roughly similar to that of cigars or cigarillos, though modern
versions can come in various shapes and sizes. The thinness of the crêpe and the shape of the
lumpia give them a relatively denser wrapping that nevertheless remains flaky and light in
texture. They are also traditionally dipped in agre dulce (sweet and sour sauce), vinegar-based
sauces, banana ketchup, or sweet chili sauce. Fresh lumpia, however, have wrappers that are
more crêpe-like and thicker due to the addition of eggs (though still thinner than other Asian
versions). They are closer in texture to the original Chinese versions and were traditionally made
with rice flour which makes them chewier. Various kinds of lumpia, fried or fresh, are ubiquitous
in Filipino celebrations like fiestas or Christmas.

Filipino lumpia wrappers generally come in two variants. The most


common variant used mostly for fried lumpia is made from just flour, water, salt, and optionally
cornstarch. This type of wrapper is characteristically paper-thin, much thinner than other spring
roll wrappers. The ingredients are mixed into a wet dough, then left to sit for a few hours before
cooking. A ball of dough is taken with one hand and smeared into a heated large flat metal plate
greased with oil until a very thin circular film of it adheres to the pan and fries. It is cooked for a
few seconds then quickly taken out and left to dry.

For "fresh" (non-fried) lumpia, the wrappers are usually made with egg
in addition to the other basic ingredients (and it may use rice flour). This essentially turns it into
a thin egg crêpe. It is still thinner than other spring roll variants, but much thicker and softer than
variants made from just flour and water.

In modern mass production, Filipino lumpia wrappers are generally


made by automated assembly-line machines similar to those used to make spring roll wrappers,
differing only in the recipe and the thickness of the wrapper. It uses a revolving drum.

Vegan versions of the wrapper exclude eggs, and is instead just made with flour, salt, and water,
which results in a thinner translucent wrap. These are also sealed with water, not an egg wash.
BUSINESS OVERVIEW

In today’s generation, most Filipinos love to eat foods. Filipinos are always curious about
famous foods today, always wanting to have a taste of them. Some Filipinos invent new dishes
that everyone can embrace. People always desire to try something new or make a twist on what
is previously popular. Even an average person can create something new by just exploring the
kitchen. Food business has never been uptight in spite of the economical status of every state,
instead its growing steadfastly. Owning a particular stall of business will moderately invite food
enthusiasts; Lumpia has never been out of spotlight, remarking every produced product on its
fillings can satisfy the cravings of every hungry Filipino.

PRODUCT DESCRIPTION

For those who don't know, lumpia is a traditional Filipino dish, similar to an eggroll, but instead
filled with meat and heavier vegetables. LJ's provides consumers with lumpia filled with lean
chicken, pork or beef with cheese and assorted vegetables, wrapped and then deep fried into a
crisp, delicious delicacy. The food is best served fresh and hot, but LJ's also gives customers the
option of ordering frozen packs of lumpia that can be easily prepared at home.

The mission of LJ’s Lumpia is to share the taste of traditional, hand-made Filipino cuisine at an
affordable price.

Our main and only product is Lumpia with different fillings with the twist of cheese inside. It is
made up of lumpia wrapper and the different fillings inside.

LJ’s Lumpia will sell hand-made, high quality lumpia, either freshly cooked and served at a
catering event, or frozen directly to customers for later consumption. At catering events, the
lumpia will be fried right in front of the customers, served in small Styrofoam bowls, and
dipping sauce will be offered in small bowls. Frozen packages will be delivered to customers,
who can also purchase cups of dipping sauce.

For each product or service:

 Lumpia is a delicious hot-dish that can be served at any party and set alongside any
entre as an appetizer and a side-dish as well. There are a number of sauces that they
can be dipped into, bringing in yet another avenue of income as the owner sells these
in smaller packages.

OPERATIONS

LJ’s Lumpia is currently prepared and stored in the kitchen of the owner’s home. The
kitchen is not yet licensed, but the product is prepared with the utmost care and efficiency
by the owner, her family members, and trusted friends.

The process begins when the owner purchases fresh ingredients from the nearby grocery
store, Labason Public Market and the local Safeway.

List of ingredients:

Lumpia wrappers; ground meat; carrots; white onions; green onions; garlic
cloves;cheese; canned water chestnut; frozen assorted vegetables; *sweet chili sauce;
*spicy vinegar sauce (*sold separately).

The items are then taken to the owner’s home and stored for a minimum of 1 ½ weeks in
the refrigerator until the owner receives an order and has the proper amount of time to
prepare the lumpia. Once there is appropriate time, the owner prepares the lumpia by first
chopping the carrots, onions, garlic and water chestnuts before moving to the ground
meat.

For the large lumpia, the meat is cooked until there is no pink before onions, garlic and
frozen veggies are added. The meat is left in a covered colander to cool before it’s
wrapped in chilled lumpia wrappers, sealed with whisked eggs, and placed into box
packages and put into the freezer.

For the small (shanghai) lumpia, the meat is placed into a large bowl and the chopped
veggies are mixed in by hand. The cold mixture is then wrapped, sealed with whisked
eggs, and placed into box packages and put into the freezer.
We are incharge with the preparation of the product, along with trusted volunteers and
family members.

The product remains in the freezer overnight and is ready for sale the next day, with a
month-long expiration date if kept frozen. Customers can choose to either pick up or have
the product delivered by the owner or owner’s family members. Customers that order in
person are asked to pay before they receive their order, while customers that call in must
pay upfront. The product is always checked over carefully before sale, and the lumpia are
cut before sale. The owner often asks for feedback from customers, and the product is
recommended for large parties or catering events.

Location of LJ’s Lumpia offers a catering service in which the owner will fry lumpia
fresh for customers, and as such, the location is flexible and mobile. The physical and
accessible requirements for these events are: at least 12”x8” of space; an open, working
electrical outlet; at least 3 feet of walking space all the way around the table. The legal
requirement is: a contract/agreement for no lawsuits being charged against the business if
burns or injuries are obtained by guests once they have been preemptively warned.

Legal Environment LJ’s owner is currently working to obtain the proper licensing and
registration for a business that deals with meat products. The kitchen is also not yet
licensed, but due to the new law set in place, it will soon be checked for approval and
used in place of a commercial kitchen.

Seasonal build-ups would occur during the holidays, when families buy for banquets or
large dinners. This will also be a prime opportunity for advertizing for catering events.

The lead-time for ordering will be at least 3 day minimum, with reservations for catering at least
1 week in advance.

Management and Organization

The daily business of LJ’s Lumpia we will be handled as the owner Loven Sacredo B.
Dagpin and Joshua E. Abejo. We are committed and passionate about the business and
has a positive, focused attitude when working. As the owner and chief, we make the
product and distributes it to customers, as well as handles special events and much of the
advertizing. Currently, the business is not large enough to hire and hold any extra
employees, but within the next few months we hope to have at least one other part-time
worker to assist in the delivery and advertizing our product.
Financial Plan

Projected Cash Flow Currently, LJ’s does not have a specific cash collection policy, as
some customers are short on cash when placing an order, so the money is either collected
upon ordering or at the time of delivery or catering service.

The start-up cost for LJ’s would be about 2,500 pesos, but seeing as the business is
already running, a starting loan for larger pursuits and purchases would be about 3,000
pesos. At the moment, though,we decided that the business will not be taking out any
loans until it has successfully earned over 25,000 pesos. There is no current tax on the
food products that LJ’s uses, so the prices for the individual product ingredients will not
change very much, if at all, and the cost for serving/cooking products.
