Todays lesson is all about prepare range of appetizer.

- Okay class, let’s all stand for the prayer (Amen)


- So, Good Morning Class, How are you today? Are you good? Alright! It’s good to hear that you
are good. So can I expect a full blast energy from you today?
- Before anything else, I would like to request everyone to arrange your chair properly and make
sure that there is no any trash around you and afterwards settle down yourself comfortably.
- Let’s now check your attendance, who is absent for today? No one. Okay Very good, we have a
complete attendance for today.
- So, before we proceed to the next topic. Let’s have a review first of our lesson last meeting.
- What was our lesson yesterday? (Yes Ms. Bernardo) Yes, very good. So our lesson last meeting
was all about tools and equipment used in preparing appetizes.
- Who can give me some example of tools? (Yes, Mr. Padilla?) Alright, Very good. A butter knife.
What else? (Yes. Mr. Enrique?) Ball cutter and Cutting board. Vey board!
- What about the equipment? (Yes, Ms. Soberano) Okay. Very good. A refrigerator.
- Wooow! Very Good everyone. Im so glad that you learned a lot from our last lesson. And I think
you are all ready for our next topic. But before that, lets have an activity first.
- I will divide you into four groups. Please count 1-4. And then Group 1 here, Group 2 there,
Group 3 there and Group 4 here.
- So what you are going to do is to arrange a jumble picture to form an exact image of it. And I will
give you 3mins only to finish the task. Here’s for group 1.. 2 .. 3 and 4.
- Okay class, are you done? Alright!
- So lets take a look of the pictures that you form. (So, there it is) (PASTE THE PICTURE INTO THE
BOARD) For the Grp 1, 2, 3 and 4.
- From this picture what have you notice? From the pictures you formed? (Yes very good a food)
- How do you think this kind of food? Are you familiar with these? (okay, so you’re already
familiar with this one)
- What do you think what kind of food is this? (Yes Ms. Baretto) Yes very good a canape.
- And yes, the picture that you form is an example of a canape.
- So now, you already have an idea of what will be our topic for today. And its all about CANAPE.
- So, what is canape?
Is a kind of appetizer and usually a bite-sized finger food.
-made of a cracker or small slices of bread or toast cut in various shapes and garnished
with savory foods, such as cheese, meat, fish/seafood’s, fruits, purees/spread, pickles
or relish.

- Here’s are the example of canape. (SHOW PICTURES)


- Canape composes of the Base, Spread, mainbody/protein and garnish. The components should
be placed accordingly to its number. That’s why I put there the number because it’s the
sequence. So let’s take a look and know what the description of each components are.
1. Base
- Must be firm enough for the gust to handle
- Can be made from variety of food such as:
a. Bread
b. Croutons
c. Toast and Crackers
d. Pastry Bases
*Here are the examples of the base. (Show pictures of base)
- Next one is the Spread.
2. Spread
- Add moisture and flavor to the canapes.
- Holds the main body and provides a fat barrier that prevents the base from getting soggy.
- Should be softened but not melted.

1. Main Body
- Also called the main ingredient which is the savory part of canapés. It can be made of
meat, fish/seafood, vegetables or fruit

1. Garnish
- Adds eye appeal and enhances the main body giving additional color, design and texture
or flavor accent to canapé. It can be a small piece of herbs, olives or any piece of
vegetables and fruit.

PROCEDURE ON MAKING CANAPÉ
1. Divide the ingredients into four components- base, spread, main body and garnish
2. Arrange the bases on a large serving tray.
3. Top each with a small dollop of spreads.
4. Put one of the toppings into the spread and then finish it with garnish.
-But before anything else, what should we remember? (Yes Ms. Rivera) Very good a Mise en -
place. Which means you have to set everything in place before doing anything in the kitchen.

- For the recap. What is canape? Very good. It Is a kind of appetizer and usually a bite-

- Next! Are you ready to make your own canape? (Amazing) but before you will have your
hands on activity, you will have to draw your designed output of canape. Afterwards you
will explain and present your output. So you have to make a Meat canape, Fish canape,
Fruit canape and the vegetable canape. Understood? Alright!
- Now, go to your assigned group and disscuss what canapes you’re going to make. Again
follow the procedures and make four kinds of canapes.
